<p class="wp-block-paragraph">我使用了<strong>大量的豆渣</strong>，蒸好的饅頭十分Q軟，豆香濃郁，風味獨特，<strong>膳食纖維也很高</strong>。豆渣能提供<strong>豐富的膳食纖維</strong>，而且<strong>熱量非常低</strong>，增加飽肚感之餘，也有助促進腸道健康，防治便秘，收排毒美顏之效。還有降脂、降糖和減重等作用。</p>

<p class="wp-block-paragraph">使用豆渣的取代了大約40%的麵粉，<strong>降低碳水，更高纖維，更高蛋白質</strong>，所以<strong>不怕吃饅頭發胖</strong>。減少麵粉攝取，少了負擔，享受美食也沒有無罪惡感，也不必完全戒掉麵粉。</p>

<p class="wp-block-paragraph">我用了<strong>自養的天然酵母</strong>（即酸種、老麵），饅頭的組織非常細緻，口感和香氣更為獨特，更有益腸道健康。要重要的是「升糖指數低」，<strong>不利脂肪積聚，不容易吃胖</strong>。而手工揉製，老麵發酵醞釀出深醇的麵香、Q彈紮實的麵皮，色澤微黃樸實，室温長放也不會乾硬。</p>

<p class="wp-block-paragraph">5. 室温發酵到1.5倍大，大約2小時（溫度約30度C）。我直接於在蒸鍋內發酵。</p>



<p class="wp-block-paragraph">6. 冷水上鍋，水煮開後計時，以中大火蒸約15分鐘，關火悶5分鐘即可。</p>

<li>高筋麵粉的用量可按豆渣的含水量調整，逐量增加用量，以揉成不黏手的麵團。</li>



<li>麵團要揉的比較硬，水的用量依照狀況斟酌。</li>



<li>硬麵團，蒸出來的饅頭口感有嚼勁，嚼道十足；軟麵團，蒸出來的饅頭就鬆軟。</li>



<li>水可以用牛奶或豆漿代替。但用清水也很好。</li>



<li>添加少許鹽可以強化筋性，更有嚼勁，還帶輕微的咸味，豆香更濃。</li>



<li>糖主要是讓味道要豐富，只是微微甜，也有助發酵。不加是可以的。</li>



<li>蒸好的饅頭要移出蒸鍋放涼，避免倒汗水讓饅頭發脹。</li>

<p class="wp-block-paragraph">因為進行生酮飲食，對於碳水高的材料比較抗拒，但是為了口感還是無法全部避免，所以有用少許的低筋麵粉，蛋糕卷更易操作、成型。一點點的碳水是不會影響酮體的，蛋糕本就是脂肪含量非常高的甜品。</p>

<p class="wp-block-paragraph"><strong>不用烤只需要煎，這個蛋糕這麼簡單。說簡單卻不簡單，煎餅皮可是說得容易，煎就起起卻是一門工夫。</strong>對我而言，卻很簡單，得容易，很易上手。可能煎蛋、煎餅煎多了，熟能生巧，對於煎鍋也很熟悉，所以事半功倍。</p>

<p class="wp-block-paragraph"><strong>不管用什麼鍋子都有不同的火力，都要自己因應器具調整</strong>。有些器具蓄熱能力強，不需要太大的火，有些卻是預熱時間要長一點，有些是很容易焦。用什麼器具也好，都要知其脾性，才能煎出好成品。通常第一、二塊會煎不好，需要預熱一下，之後的就會煎得很漂亮。</p>

<p class="wp-block-paragraph"><strong>捲圓柱體原來也是很難的，我真的不知道！</strong>因為我就捲一捲，就捲好了，沒有什麼捲殘、捲破的問題。很簡單啊重！。但是，友人與我反映，她就捲得一塌糊塗，愈捲愈扁，最後鮮奶油都爆開了。對於這，我也只好說一說自己的小心得。</p>



<p class="wp-block-paragraph">室温高不利操作，鮮奶油容易融化，這也是為什麼我在冬天才做蛋糕。所以，動作要快，不要拖拖拉拉。</p>



<p class="wp-block-paragraph">另外，在餅皮底，最好鋪上一層保鮮紙，可以輔助捲動餅皮，也可以作定型，保持形狀。</p>

<p class="wp-block-paragraph"><strong>不得不提到，我非常得意的樹皮，厚厚硬硬的，像真度極高。</strong>這一點我還真的花了心思，才達到要求的。而且，還有松脂流出，真的逼真得不得了。<strong>根本木頭無誤！</strong></p>

<p class="wp-block-paragraph">首先，巧克力要加鮮奶油，才會有松脂流出。</p>



<p class="wp-block-paragraph">其次，不能直接加熱，要座熱水融化。</p>



<p class="wp-block-paragraph">再者，分次抹上巧克力醬，不用太平整。</p>



<p class="wp-block-paragraph">另外，巧克力醬凝固與未凝固之間，用叉子劃坑紋，可以畫出立體、粗糙的紋路，分次劃紋，才能深淺不一。放冰箱冷藏一會可以加快。</p>



<p class="wp-block-paragraph">其他的，就是你的動手能力了。<strong>其實，真的不難，很簡單。</strong></p>

<p class="wp-block-paragraph">無水奶油是點心酥化、香味的來源，有非常好的起酥效果。白油、起酥油等是化學合成物，而無水奶油是天然的油脂，適用於餅乾、鳳梨酥及芋頭酥等等點心製作。只需要一磚無鹽奶油就可以煮出香氣撲鼻的無水奶油。</p>



<p class="wp-block-paragraph">中式點心的酥脆外皮，我喜歡用無水奶油，對我而言奶油比豬油容易獲得，味道和香氣也更好。<strong>保存期也長冷藏大約半年</strong>（可以更久），油中不含容易腐壞的蛋白質等物質，可冷藏保存很久。 </p>

<p class="wp-block-paragraph">將奶油加熱蒸發水份，撇去泡沬及摒棄沉澱物，就可以得到無水奶油。經過煮，將水份雜質與乳糖除去，留下的就是無水奶油。顏色呈淡琥珀色，特殊的焦糖堅果香。<strong>顏色和焦香味可以自己控製，煮久一些，焦一些，那香氣更濃香</strong>。</p>

<p class="wp-block-paragraph">煮無水奶油真的是<strong>自我療癒的好時光</strong>。煮的過程，那奶香、焦糖香滿屋子飄揚，彌漫著甜甜的滋味，就是那種美得冒泡的感覺，也確實是在冒泡泡，美滋滋的！</p>

<p class="wp-block-paragraph">慕斯蛋糕的口感是最討喜的！ 好像在吃泡沫一樣，細緻濃厚的奶香，加上清香的藍莓，清爽不油膩，一口是不會滿足的。 </p>



<p class="wp-block-paragraph">這次分享低碳、無糖、無麩質版的蛋糕，慕斯蛋糕運用了大量的鮮奶油、奶油乳酪，尤其適合進行<strong>生酮</strong>者，或者<strong>低碳飲食</strong>者。 </p>



<p class="wp-block-paragraph">可以完全不用烤箱，做出一個漂亮的蛋糕。</p>

<p class="wp-block-paragraph"><strong>從牛奶開始，只要室温發酵，不需要任何機器、零技巧</strong>。 材料、工具非常簡單，在家就能養出源源不絕好菌酸奶/乳酪/優格。 希臘乳酪也可以喔！</p>



<h2 class="wp-block-heading">⎯ 自製乳酪的原理 ⎯</h2>



<p class="wp-block-paragraph">沒有什麼原理，就是讓牛奶發酵而已！<strong>夏天的溫度最有利發酵</strong>，冬天温度低，放在温暖的地方增加温度，比如爐台旁或放入保温箱。 温度低時，我會放入烤箱，再放入一杯熱水，保持温暖，有利發酵。</p>



<p class="wp-block-paragraph">經驗告知，用全脂牛奶會較濃稠。無論是新鮮牛奶、保久鮮都可以成功。</p>

<h2 class="wp-block-heading">⎯ 為什麼自己做乳酪 ⎯</h2>



<p class="wp-block-paragraph"><strong>味道、口感及營養都比一般乳酪佳。</strong>市售乳酪真的很貴，自己做成本只有售賣的1/5或者1/10，而且全天然、無添加，也没有什麼增稠劑。</p>



<p class="wp-block-paragraph">自己做希臘乳酪就更棒了（很簡單的，跟著影片就可以了）。<strong>買到的通常是「希臘式乳酪」Greek Style Yogurt/Greek Recipe 不是「希臘乳酪」。</strong> 買食物我會看食物標纖或成份及一些非常小的文字，不看不會發現「掛羊頭賣狗肉」的產品，大標題寫著「<strong>Greek  Yogurt</strong>」，內文是寫「<strong>Greek Style Yogurt</strong>」，都在同一包裝上。這樣也是可以！<strong>這是騙消費者嗎？</strong>我只能相信，我也無法進一步查證。這也不是我的工作，不買就是。</p>



<p class="wp-block-paragraph">在進生行生酮、低碳飲食時，用來做甜點都非常好。 </p>



<h2 class="wp-block-heading">⎯ 希臘式乳酪和希臘乳酪的差別 ⎯</h2>



<p class="wp-block-paragraph">🌿<strong>「希臘式乳酪」</strong>與一般乳酪無異，只是加入了乳蛋白和增稠劑如改性粟米粉、改性澱粉質和明膠等，來營造出如希臘乳酪般稠口感。</p>

<p class="wp-block-paragraph"> 🌿<strong>「希臘乳酪」</strong>篩去水份及乳清，因此乳含量會較少，適合一些乳糖不耐症或關注糖尿病人士食用。希臘乳酪能提高飽足感，從而控制食量，適合減肥/生酮飲食人士。 又名脫乳清優格/優格起司。</p>
