<p>這次，創新口味，特別用紫米搭配蜜紅豆，味道清甜不膩。<strong>獨特之處是咸甜皆備，吃超來有咸有甜，一次滿足兩種口味</strong>！花了不少心思搭配材料，希望好看又好吃。用紫米，除了顏色好看，也有花青素，營養價值也比一般糯米高。加上不同的的材料的使用，口感提升不少。尤其是甜絲絲的蜜棗、香氣十足的紅棗，真是絕配。在煮粽子時，那個香甜的比粽葉香更吸引人。</p>



<p>端午，<strong>廚房裡氤氳的糉香， 都是兒時朦朦朧朧的記憶裡…… </strong>「煮糭子時糭葉飄香」，這些都是回憶、記憶……就是每家每戶的大灶煮著糭子，玩耍時總是飄來鹹鴨蛋夾著糭葉獨特香氣，記憶的味道。</p>



<p>我偏愛廣東肉糭，尤是加<strong>一定要有一顆咸蛋黃，不是半顆</strong>！吃粽子的時候，總是在找那塊肥肉、那顆咸蛋黃。這些年來，糭子的口味也日新月異，但就是吃不到對味的，自己包製就能滿足嘴巴了！</p>



<p>包粽子是一年一次的大工程。從備料到煮粽子，一一詳細說明，就算第一次包也能上手。</p>

<h2 class="wp-block-heading"><strong>◤步驟</strong>：備料、包製、煮粽子</h2>



<h3 class="wp-block-heading">▷ 1.  備料</h3>



<h4 class="wp-block-heading"><span style="text-decoration: underline;">前一、兩天準備：</span></h4>



<p><strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">蜜紅豆</mark></strong></p>



<p><sub><strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-2-color">要有好吃的粽子，蜜紅豆還是要一些時間準備。值得的！</mark></strong></sub></p>



<p>紅豆清洗乾淨後用清水浸泡一晚，再煮兩三次，去苦澀。不用煮熟，水煮開一會兒就可以把水倒掉，重覆兩、三次。</p>



<p>濾去水份，電鍋蒸煮1小時，不用蒸爛，保持原粒。中間要看火、調整時間，因為每地方的紅豆均稍有不同，有些蒸1小時會爆開）。</p>



<p>蒸好後，濾去水份，加入500毫升清水、250克和紅豆一起煮，把片糖煮溶就可以了。</p>



<p>撈起紅豆，把糖水再加180克片糖煮成糖水，把紅豆浸泡在熱糖水中，放涼後放入冰箱浸泡過夜。</p>



<p>如有時間，<strong>可以重覆把紅豆和糖水再煮熱、放涼、冷藏，紅豆會更香甜</strong>，就是準備時間更長。</p>



<p><strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">五花肉</mark></strong></p>



<p>1000克五花肉洗乾浄、切厚塊，如用500克五花肉調味料減半。加入五香粉2湯匙、生抽3湯匙、老抽2湯匙、米酒3湯匙、麻油1湯匙、糖1湯匙、鹽1/2湯匙，拌均勻後放冰箱冷藏醃製一晚入味。</p>



<p>喜味道重些，鹽可以加入1湯匙。如無法前一晚準備，最少也要醃製3小時。</p>



<p>原來想放兩塊五花肉，但是粽葉品質不佳，包不了太多餡料，只放了一塊肉。</p>



<p><strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">糯米</mark></strong></p>



<p>紫米、糯米分開洗乾淨，浸泡過夜（約6小時）。</p>



<p><strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">粽葉、咸水草</mark></strong></p>

<h4 class="wp-block-heading"><span style="text-decoration: underline;">當日：</span></h4>



<p>已經浸泡一晚的<strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">紫米、糯米</mark></strong>會稍為變膨脹。瀝乾水份後，把紫米、糯米一起放在大盤中，加入油2湯匙、生抽1湯匙、鹽1湯匙、糖1湯匙，混合均勻備用。</p>



<p><strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">粽葉、咸水草</mark></strong>浸泡過夜後，用刷子或海綿把葉子兩面清洗乾淨，雖然已經泡了一整晚，己變得軟，粽葉還是要經過煮的步驟才會柔軟，包裏餡料才易破。</p>



<p>煮一鍋熱水，把粽葉、咸水草放進去後煮軟，每一部分都要煮軟，大約煮15分鐘撈起、瀝乾備用。</p>



<p>帶衣的<strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">栗子</mark></strong>煮10分鐘，不用煮熟，趁熱用濕毛巾搓去外皮。如栗子不熱會很難去衣，可以在煮熱去衣。</p>



<p><strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">咸蛋黃</mark></strong>建議用一整顆咸鴨蛋，真空包裝的味道差很多。取咸蛋黃可以鐵匙刮去黑泥，沖洗乾淨。<strong>咸蛋黃有一層透明的薄膜，要用手撕去，油脂才會滲入粽子，與糯米融合一起</strong>。</p>



<p>每顆粽子會用到半粒<mark style="background-color: rgba(0, 0, 0, 0);" class="has-inline-color has-palette-color-1-color"><b>蜜棗</b></mark>，硬生生的蜜棗用刀就可以剖半。刀的後部分沿著外圍剁，再稍稍用力就可以輕鬆分開，再用刀的後部分剁核，一兩下就可以起核了。</p>



<p>把<strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">紅棗</mark></strong>清洗後，用剪刀去核備用。這很簡單，就不多說了。或者用已去核的紅棗。</p>

<h3 class="wp-block-heading">▷3.  <strong>煮粽子：</strong></h3>



<p>準備一個大鍋，水要沒過粽子，用中火煮3小時，中間加水2-3次。煮好後直接浸在水中直到水變涼，撈起、瀝乾就可以食。</p>

<p>1. 包大隻粽子，紫米或糯米可以多加100克。</p>



<p>2. 現在包的材料多米少，米的用量不多。米可以再多一些，粽子會較漂亮。</p>



<p>3. 粽子葉要大塊，才好包餡料。</p>



<p>4. 包不好沒關係，餡料超好吃，可以補救。</p>
