<p>自己動手做真的起級簡單，沒有任何技術，只要有綠豆，一定可以吃到美味可口的綠豆涼粉，而且咸甜皆可，隨喜。我有喜歡的醬汁，也超級容易，可以用在各式各樣的涼拌菜，很萬用、美味。與綠豆涼粉搭配在一起，酸酸辣辣，絕佳！拌碟如有一些小黃瓜絲、蒜泥、炸碗豆、芫茜和白芝麻等就十分完美，口感豐富無比。</p>

<p>說到綠豆，廣東人通常是加糖煮成綠豆沙，用來作飯後甜品或消暑，以及消熱解毒、下火除口氣等。小時候，一到夏天家裏就很常煮一大鍋，讓小孩子消暑、下火。其實，綠豆有很多的吃法，綠豆糕、綠豆餅、綠豆涼粉和冬粉。​​有機會再分享更多的食譜。</p>

<li>綠豆要浸泡透，才容易打得細膩。我都會隔夜浸泡，夏天放冰箱保存。</li>



<li>浸泡綠豆最好放冰箱，可以防止發芽、發臭，尤其是夏天温度高。</li>



<li>綠豆攪拌得細膩，比較容易洗出澱粉，所以攪拌機可以打久一些。</li>



<li>綠豆澱粉是凝固成型的關鍵。要洗出、擠出澱粉，只有足夠的澱粉才可以成型，並不需要添加額外的澱粉凝固，純綠豆製作。</li>



<li>純綠豆澱粉凝固後，結實、Q彈，但吃起來的口感是偏軟，入口即化，不會爽口。</li>



<li>綠豆：水比例大約是1：2，比較不容易出現問題，不會水水的。</li>



<li>過濾袋準備大一些，方便搓洗綠豆澱粉。</li>

<p>消暑解渴、健脾袪濕、清熱潤肺、老少咸宜 、養生保健。據聞具有<strong>清熱氣</strong>、<strong>補元氣</strong>的功效，所以被稱為「清補涼」。</p>



<p>廣東清補涼配方各家不同，坊間的材料並不統一，<strong>多是健脾袪濕、清熱潤肺為主</strong>，藥材煮成的糖水，有其獨特的風味。藥材煮成卻一點都不像吃藥，甜甜的，熱食、冰食各有「擁躉」。</p>



<p>從小的記憶，到藥房抓一包四四方方的藥包，<strong>每一樣都是一小撮，煮好後變成一大鍋糖水</strong>，非常神奇、可口！沒有藥味，也沒有一點苦味，是甜的，也是夏天、秋天最愛的糖水。家母總說，「天氣熱，喝碗清補涼，健脾生津」、「入秋了，喝碗清補涼，潤一潤」和「喝碗清補涼，開胃啊！」。也不知邊對不對，反正我喝完後，通常是一夜好眠，醒來後特別舒爽。</p>



<p>不少年的大時大節，相聚在親戚家，總是煲一大鍋清補涼作為飯後糖水，一人一碗，圍坐在長輩旁，談談日子，講講生活。</p>



<p>清補涼是廣東<strong>涼茶</strong>，也是廣東<strong>糖水</strong>，兩是廣東<strong>湯水</strong>，做法十分多，養陰生津、健脾開胃，家庭糖水，老少咸宜，不一一贅述，希望有機會再分享。</p>

<p>識花香，不知花用。 幽香、鮮甜、清爽🌿 夏天天氣悶熱，特別喜歡煲冬瓜湯，湯味清新而且消暑解渴，如果加點「夜香花」🌺，湯水會帶有清新的氣息，還可以清心除煩，舒郁開結，清熱明目。</p>



<p>聞着香氣已經心曠神怡，更何況喝著那份淡雅的清甜…… 🌸散發陣陣幽香。夜香花。夏天才有的花，開花前色澤嫩綠，開花後則帶淡黃，且散發幽香。</p>



<p>夜香花除香味非常迷人，聽聞具有很高的藥用和營養價值，可治感冒頭痛、中暑、牙痛口臭、清肝明目等等。</p>



<p> 不宜搭配味道過重的食材，搭配清淡的瓜菜才能突顯出夜香花獨有韻味。 </p>

<p>這次用「<strong>西施芒果</strong>」 皮薄肉細，果肉黃澄，芬芳清香。相對其他芒果，纖維少、果肉多、果核小，<strong>口感如水蜜桃般細緻</strong>，入口即化！ 做成冰淇淋非常合適。<strong>不需要加糖、添色、增香，原汁原味，純天然，吃得安心</strong>。 </p>

<p>這次的冰淇淋材料比較簡單，沒有雞蛋，做法也是相對簡便，也不需要冰淇淋機。<strong>非常簡易的家庭冰淇淋</strong>，家庭做就不需要添加太多東要，吃到芒果的天然味道，濃厚的奶香味就好了！</p>

<p>我很喜歡充滿果肉的水果冰淇淋，特別是芒果，不加任何水份。這種只能自己手工做才能吃到。雖然沒有用雞蛋乳化，但口感還是很綿密，很快在舌尖上融化。</p>
