<p>醃漬蔬果並不難，只要兩種材料就可以醃成功，不怕步驟繁複和做錯，簡簡單單就可以自己醃酸菜。其實材料的份量都很隨意，一般不會特別稱量，抓個大概的份量即可，醃製了第一次，後續的醃製就更簡單了！除了醃製時間更短，更可以用來醃製其他酸菜，而且愈用愈香、風味愈好。</p>

<p>酸菜可拌丶炒丶湯及火鍋。無論是製作酸菜魚、 酸菜炒五花肉和酸菜炖牛肉等等不同菜式，是百搭之選。我家最喜歡用來配白粥吃，用蒜頭簡單炒一炒，吃起來爽香爽脆，與熱粥是很好的搭配，尤其是寒冬。</p>

<p>醃酸菜喜歡用芥菜，即長年菜，味道及口感特別好，酸脆爽口。用傳統方法醃製，可品嚐酸菜原有的鮮味，也食得安心、健康。一到冬天就非常期待芥菜上市，除了清炒、放湯，還可以醃製酸菜。這樣醃製的酸菜，非常酸爽，別具香氣。</p>

<p>雖然醃酸菜對我而言已是家常便飯，但每次開封都特別期待、雀躍。除了是驗收成果，也是喜歡聞到那股自然發酵的酸香味，有著說不出來的生活氣息。特別有親切感和踏實感！</p>

<li>醃酸菜的容器，最好是玻璃或泡菜瓶子，不建議用塑料或金屬材質。</li>



<li>芥菜不要燙太久、過熟，每棵方方面面共燙30秒左右足以。</li>



<li>香料（月桂葉、芫荽籽）不是必須，但這可以讓酸菜別具迷人香氣。</li>



<li>壓上重物（石頭/小碗/小碟子），可避免發酵過程中，蔬菜浮起，容易變壞。</li>



<li>水的用量不用太準確，是一個大約的參考數（可按需要增減），但一定要沒過芥菜，保證芥菜全浸泡在水中。</li>



<li>如瓶子注滿水，瓶入欠缺空氣，可以避免發霉和變壞。</li>



<li>一般會放到陰涼處，讓它自然發酵14天至一個月。</li>



<li>醃酸菜一次不要醃太多，保存的時間太長，就會不爽脆了。</li>



<li>湯水可以持續使用，活躍的發酵力可以減少蔬菜的醃製時間，而且愈用愈香。</li>

<p>我很喜歡吃麵包，尤其是那種硬硬的麵包，自從接觸了天然酵母，更是愛上酸種麵包，因<strong>為口感更好，外脆內軟，氣味更濃郁、迷人</strong>，我非常非常喜歡這種微酸的麵包香，天然而簡單又深厚濃郁。真的吃過了就回不去，永遠回不去！再去接觸商業酵母麵包，真的淡而無味。</p>



<p><strong>這食譜的麵包只有三種原材料：麵粉、水和鹽。</strong>只有麵粉和水就可以烤出麵包，不需要太 多的添加，但添加一點鹽可以增加筋性，讓麵包的外型更好。而且，我也不添加任何一種糖，材料愈簡單，後續的變化愈多。</p>

<p><strong>不需要買一些專業的麵粉和昂貴的麵粉，市面上很容易買到的麵粉也可以做出外型很漂亮的麵包。</strong>我用來做麵包的品牌，沒有特定，都是在起市買的，是一般、很大眾化的麵粉，尤其是特價時才買，不用麵包專用的麵粉也是可以烤出美美的外型、組織。麵包是主食，也是所愛，因為手上有隨手可得的材料就更好當然，不同品牌、等級的麵粉，成品是有差異的，如果用一些專業的頂級麵粉，你也會是大師級，但我是平凡人，看到昂貴的價格實在吃不消。</p>

<p><strong>這食譜不用揉麵</strong>，也不用機器攪打，只要不時翻動一下和讓給予時間讓麵團成長和發展，就可以自然產生筋性。再加上一些強化筋性的手法，麵包的外型就會得到強化，烤出來不會扁塌。免揉麵包不是不好，只是多一些手法就可以烤更漂亮的麵包，我會選擇後者。</p>

<p>享用的方式很多，最喜歡是簡單抹上奶油或打發奶油，一口咬下去，慢慢在嘴裏嚼，慢慢地吸納那獨特的香氣，再一杯黑咖啡結尾。用來做成三文治，夾上蔬菜、蕃茄和芝士也是很棒。如果，切厚片微烤後鋪上牛油果或煙燻三文魚，隨意撒上一點海鹽、即磨黑胡椒，美味無比。<strong>太多的吃法了！只要喜歡，怎麼搭配、吃都可以。</strong></p>

<p>我用的是自己養的天然酵母，用麵粉起種（50%全麥麵粉、50%水），平時養在冰箱，定時餵養。在做麵包前會先把冰箱的原種放大，以激活酵母，讓酵母活躍起來。</p>



<p>把冷藏在冰箱的原種，取出10克，加上45克高筋麵粉和45克清水，混合均勻，放在室温發酵至兩倍大。通常，我會做麵包的前一晚臨睡前餵養，明日早就可以使用。</p>



<p>可以用浮水測試。如果原種漂浮在水面，就代表充滿了空氣，酵母活躍度很好，是適合來做麵包的狀態。</p>



<p>如果發酵過度就多一些水和麵粉，每30 分鐘檢查一下，達到理想的狀態就可以使用。</p>

<p>把全部的麵粉和清水混合，置室温進行水合1小時，自然產生筋性。</p>

<p>經過水合作用，麵粉和水得到融合，也產生筋性，才加入原種。直接用手抓合麵團和原種，完全混合均勻後，加入鹽強化筋性。沿用剛剛的抓合手法混合，我會額外加入與鹽同等重量的水，以和更好的融合。</p>



<p>全部材料均勻後，<strong>蓋上濕布置休息10分鐘。</strong></p>

<p>經過水合和加鹽，也用一些手法強化筋性。透過重覆的拉伸、折疊麵團，動作持續約15分鐘，再以抓起麵團拉薄，如麵團薄而不破，可以透光，就代表已有足夠筋性，就可以進行下步，室温下發酵1小時。</p>

<p>重覆拉伸、折疊的動作4次，剛好把玻璃碗轉動一周。這動作每一小時重覆1 次，大概重覆4～5次就差不了，麵團的體積會長大了1.5～2倍，充滿了空氣，布滿大大小小的氣泡。如果體積不足，可以多重覆。</p>

<p>這一部分是最療癒的。每一次接觸麵團都可以感受到變化，雙手獨摸著麵團，既輕又柔，充滿著空氣的棉花，又好像雲一樣，好像飄浮在手上，特別地安靜、自在。輕輕獨摸表面，又是害羞地垂著頭⋯⋯</p>

<p>桌上撒上手粉防粘，輕輕倒出麵團，用刮刀把麵團對折（四邊），再翻面收圓。蓋上濕布（一直用的）休息20分鐘。</p>

<p>在麵團表面撒上手粉，再用刮刀輔助輕輕地翻面，輕輕地拉伸麵團，待麵團變大，再往兩邊折疊，從靠近自己的部分捲起麵團，往內收圓。移到發酵籃中，把收口捏緊，撒上手粉。</p>

<p>麵團移到發酵籃後，置室温發酵大約1.5小時（視乎環境温度和濕度），麵團會明顯變大，用手指輕按，會緩慢回彈並留下淺印。包上保鮮袋，放在冰箱冷藏過夜。最多可以冷藏兩天，時間愈長風味愈深厚。</p>

<p>提早30～60分鐘以250<strong>˚</strong>C把鑄鐵鍋連蓋預熱。把麵團從冰箱取出、倒扣，劃上一個裂口，就可以移到鑄鐵鍋，以250<strong>˚</strong>C烤20分鐘，去掉蓋再烤30～40分鐘，至喜歡的焦糖色。</p>

<li>星期五傍晚準備餵養、放大原種，室温放置一晚，明天就可以使用了。就可以在星期六的當天處理麵團，星期日就可以從冰箱取出，送進烤箱，吃到一個新鮮、美味的手工麵包。如果配上咖啡，就更美妙了。</li>



<li>每次接觸麵團，先把雙手沾濕，可以不沾麵團，方便操作。</li>



<li>完全放涼需要幾個小時，麵包會經歷回軟再變軟的過程。</li>



<li>徹底放涼，可放室温存放2～3日，千萬不要放冰箱冷藏。</li>



<li>室温儲存方式：用麵包籃或牛皮紙袋裝，吃的時候才切片或喜歡的大小。</li>



<li>冰箱冷凍儲存方式：切成方便吃的大小，用密實袋裝好，放冰箱冰凍。吃的時候真接取出，用烤箱烤熱即可。一般我會用100<strong>˚</strong>C～120<strong>˚</strong>C烤10～15分鐘左右，時間和温度視乎麵包的厚度和大小。</li>

<p><strong>老一輩有一種處理食材的方法叫做「交給時間」，是生活智慧，也是隨遇而安。</strong>把蔬菜搓鹽醃起來，交給時間發酵，不僅延長了食材保存期，還增添食材風味。簡單處理食材，透過時間醞釀，自然而然變成美味，這一點也最讓我喜歡的。<strong>這也是從祖輩就流傳下來的存食智慧，惜食之美，也是記憶中的味道</strong>。</p>

<p><strong>我的酸白菜做法是一個老婆婆傳授。</strong>她醃製酸白菜的方法很家常， 由祖輩相傳，平易近人。隨著時代變遷，醃製做酸白菜的做法有一些改變，從大缸換成了玻璃瓶，巨大石頭也變成了小碗，份量也跟著變小了，因應環境和條件做法也有一點點不同，但味道依舊。</p>

<p>這位老婆婆是小學同學的嫲嫲，自從在她家吃過手工酸菜水餃後，就念念不忘，結下不解之緣。本著小吃貨的口福和執著，我也在老婆婆身上學到了她家的醃酸白菜。多年來，與小學同學沒有聯繫了，她的嫲嫲應該也不在了，但她<strong>教我醃酸白菜的方式卻沒有斷。至少我很喜歡，也很愛吃！</strong></p>

<p>我的兩顆大白菜去掉表面葉子後，約重3,300克，用了大白菜重量的4%海鹽（約半碗），可以保存一年不壞，香氣非常濃郁。</p>



<p>收成後續用老泡菜水和添菜，鹽的用量可以减少或不放鹽， 室温醃製約2個星期左右或喜歡的酸度。</p>

<p>5. 將白菜交錯排入玻璃瓶中，壓上石頭或小碗後注滿4%鹽水，蓋上蓋子密封等待2個禮拜後就可以食用。</p>

<li>白菜運輸路遙，久經風霜，多多少少也會帶點泥沙。醃製前以清水沖洗白菜表面比較衛生、安心。以前的人不清洗就直接醃製，因為是自家種的菜。</li>



<li>壓上石頭或小碗，可以把白菜壓在水底，不會浮出水面變壞。</li>



<li>注入鹽水，愈滿愈好，把接觸到氧氣的機會降到最少。</li>



<li>鹽水要用完全放涼的開水，最好不用生水。</li>



<li>醃製泡菜最好用陶瓷或玻璃瓶，使用玻璃密封罐/瓶更好，可以阻斷空氣、雜菌污染和不會產生白膜。玻璃瓶密封性不佳可以先封上一層保鮮袋再蓋上蓋子。</li>



<li>如果不想醃好酸菜變暗沉或發黑，使用海鹽或是泡菜鹽的顏色就會漂亮，沒有話用一般的鹽來醃製也可以。</li>



<li>使用密封罐/瓶，在醃製過程當中要讓排氣，瓶子才不會爆裂開。</li>



<li>如果覺得酸度足夠，可以把酸白菜放入冰箱冷藏停止發酵。</li>



<li>如果有老泡菜水，可以加入，醃製速度就更快了。把酸白菜都吃完了，可以繼續添菜醃製新的，不加鹽或加入一點點鹽也可以。</li>

<p>不怕說，<strong>小時候曾偷喝父親的荔枝酒</strong>，<strong>自此愛上了這瓊漿玉露</strong>！往後，總是時不時偷呡一小口又一小口。當時，循著<strong>空氣的彌漫的餘香，甜甜美美的</strong>，依著甜蜜找到了閣樓的那壇自己釀的荔枝酒。估計剛剛有人取酒，空氣中便留下了絲絲甜甜的香氣。<strong>可見，天然釀造的荔枝酒是多麼誘人，香氣多麼的濃郁，久久不散</strong>！<strong>把一個小女孩喝得畢生不忘</strong>。</p>

<p>荔枝酒，我已經三年沒有釀了。疫情三年，沒有自家老樹的荔枝可釀，也不想用市售的農藥荔枝，所以三年沒有品到這迷人的酒香。今年喜逢荔枝大造，吃都吃不完，又可以用來釀酒了。我也樂於把荔枝香用不同的方式保存起來，尤其是泡酒和釀酒，<strong>久不久聞一聞，呡一口小酒，放空一下，偶而微醺，放飛一下</strong>。</p>

<h2 class="wp-block-heading">如何釀造天然荔枝酒？</h2>



<p><strong>用的最天然、古老釀出來酒，酒精度數不高，很容易入口，像喝蜜糖一樣</strong>。只需要把荔枝去殼去核，用冰糖層層疊疊，建議比例為荔枝肉：糖（1：0.4），即1000克荔枝肉用400克糖，然後密封起來，貯藏在陰涼、避光處三個月就可以開封。</p>

<p>不同品種的荔枝各有風味，我家常用<strong>妃子笑</strong>、<strong>桂味</strong>和<strong>糯米糍荔枝</strong>，釀出來的酒香各有特色。妃子笑（玉荷包）清香酸甜；桂味清香清甜；糯米糍甜美多汁。我尤愛桂味，因有桂花香而聞名，<strong>用來釀酒，酒會自帶桂花香，酒香味甚是迷人</strong>！根據喜歡的品種，釀造喜歡的味道。</p>

<p><strong>糖／冰糖最好</strong></p>



<p>建議用冰糖。<strong>冰糖純粹、味清，可以慢慢融化</strong>，並與荔枝融合。糖的用量可以自行調整，因應荔枝的品種不同，甜度也不一，糖當然會調整。糖是發酵的關鍵，是養份，不可以太少。另外，糖少了會偏酸。</p>

<p>用玻璃瓶是最好的，可以觀察發酵情況。<strong>闊口而大就更好</strong>。<strong>發酵需要夠留一些空間</strong>，冰糖融化後，大約要有三成用作空間發酵，有一半空間就更美好了，避免了爆瓶的可能性（雖然從未發生過）。釀酒器具經過消毒處理，可以避免發酵失敗或發霉。消毒可以是水煮，也可以用烤箱烘烤或噴酒精，反正順手就好。</p>



<p>以前，用的是酒壇，特別用來裝酒的瓦缸，一個個排在閣樓。那時，只見母親大陣仗地清洗、曬缸，沒有什麼消毒，也不見酒發霉。</p>

<p>時間愈久，酒顏色會變深，沉澱物也較多，酒質愈變得混濁，因此最多六個月就要開封。<strong>開封後，把荔枝肉與酒分開，以保持酒質和風味</strong>。用綿布過濾可以得到清澈的酒。可能，沒等到六個月就不小心把酒喝完了。</p>

<p>釀造的頭一兩天，我會搖晃幾下均勻荔枝肉，順便觀察一下發酵情況。其實，不搖也可以，反正把它放在角落，也沒有什麼問題，時間到了一樣可以收成。</p>

<p>荔枝肉可以直接食用或曬乾，這次我想用來做麵包，所以封好放冰箱冷藏。千萬不要丟棄喔！用來做麵包可香了，現成的酒漬果肉，也不用泡水或泡酒。或者，把果肉切碎，加上氣泡水、雪碧或茶，一杯飲料就有了。</p>

<p>荔枝殻說硬又不硬，如果用手剝就會黑指甲、傷手，剝幾顆還可。找到方法正確地剝荔枝，又快又輕鬆地剝殻，<strong>不傷手</strong>及<strong>不黑指甲</strong>，也<strong>完全不會碰到荔枝肉</strong>，剝荔枝就在一兩秒之間（熟手的就一秒），<strong>金蟬完美脫殻</strong>。</p>

<p>荔枝殻上有一條凹槽， 是最脆弱的地方，雙手握住凹槽，輕輕夾捏就會爆開。爆開後只需一擠，就能快速離殻取肉，不會滿手汁水，黏糊糊的。<strong>一捏一擠兩個動作</strong>一氣呵成。</p>

<p>那瓶<strong>黑糖桂花釀</strong>，味道不如<strong>荔枝純釀</strong>來得好。黑糖放得不多，還添加了一些桂花乾，因為瓶口小，更把荔枝撕碎，四個月後，沉澱物明顯偏多（可能把荔枝撕碎了），味道偏酸，荔枝的香氣被搶去了不少。反而，用冰糖和原顆荔枝肉的純釀，十分甜美、清香，荔枝的香氣十分明顯和濃郁。<strong>簡簡單單反而最引出荔枝的清香、甜蜜。</strong></p>
