<p>清明前後，艾草特別青嫩，過了這時間，艾草就會苦。看到艾草上市，就會把艾草燙煮，再冷凍起來，不論時節都可以吃。就樣就可以把春天的保存起來，隨時一親芳澤——吃到這個只屬春天的青團。</p>

<p>很喜歡艾草的香氣和藥用價值，也很喜歡吃茶果，所以在這個美好的季節，一定會追尋艾草，尋草覓香。春雨綿綿，百草嫩葉瘋狂萌芽，是吃「嫩草」的最佳時間！客家人最愛把生活上的草藥做成茶果，既方便食用，也方便保存，山草藥的功效在不同食材的搭配下也大大提升。例如：雞屎藤、苧（粗）葉都是常用來做茶果的植物。</p>

<p><strong>艾草是一種常見的中草藥，揉之有鮮明香氣，有理氣血、祛寒濕等功效</strong>。艾草可以入饌、驅蚊，也可入藥、艾灸，既可養生又能治病。現代研究發現，艾草中含有多種營養素，具有抗氧化和抗炎作用，可以提高免疫力；可以增強心臟功能，促進血液循環，預防心血管疾病等等。</p>

<p><strong>除了草藥本身具有藥效之外，也有纖維和天然葉綠素，讓茶果的更漂亮、可口和吸引</strong>。加入植物的粉團，搓揉粉團便更容易，不會粘手，也不會一團軟趴趴，久缺彈性，也減少了一些粉類的使用。從茶果的製作，處處見生活智慧，也可以看到客家人節儉的本色的發揮得淋漓盡致，取生活常見的食材，製作出有益健康的果食，易於攜帶，方便外出工作裹腹。</p>

<p><strong>沿用我家做茶果的方式處理粉團，把艾草和糯米粉煮成艾草羹糊，再慢慢揉入粉和糖</strong>。這種方法是很傳統，具有智慧的做法，減去揉粉團的難度，也增加了揉粉團的時間，更富口感。</p>

<p><strong>我特意用薏米和赤小豆這兩種祛濕效果超強的食材做成內餡，袪濕效果更強。</strong>薏仁和赤小豆這兩種食材很常見，特別在潮濕多雨的時候季節，我會隨手各抓一把浸泡後，加水蒸煮或直接煮成茶飲。我一般只喝水，偶爾會吃掉茶料（怕澱粉吃太多會胖），扔多就覺的浪費。故，屯積上一定份量就可以用來做內餡，既不用浪費，也是一種新口味，用法多變。尤其蒸熟的薏仁有粘性，炒製成團的時間很短，很沒有強列的味道，調味很容易。第一次吃到薏米和赤小豆內餡的人，以為這是紅豆。</p>

<p>我用的是<strong>生薏仁</strong>，善於清熱利濕；<strong>赤小豆</strong>就是很像紅豆的豆子，比紅豆小、瘦長，肉眼很容易分辨，袪濕效果更勝紅豆。</p>

<p><strong>本著不浪費的心態，就產出了新的口味的艾草茶果，也成功收買了客家婦女幫我消耗掉不想浪費的澱粉質</strong>。直接把蒸熟的薏米和赤小豆拿到老母面前，她眼都不願意看一下，當做成了茶果，還問我可不可以拿一些去分送⋯⋯記憶中，客家婦女會與鄰里分享這春天的美味。</p>

<li>這次用的艾草是園圃野生的，品質特別好，味道也較濃烈。所以，趁著生長旺盛機會採了一堆，用水燙煮後，冷凍保存，隨時可以吃。燙煮時，加了一點點梳打粉，以保持顏色翠綠。</li>



<li>生薏仁更有袪濕效果。</li>



<li>炒製內餡加入的糖和油可以一次加足，但我喜歡因應口味調整，會分次加入，而砂糖比砂糖更甜。</li>



<li>200克糯米粉中，我留起了50克，在後面慢慢揉入，以調整粉團濕度，比較容易得到柔軟好包的粉團。糯米粉的吸水性不同，以艾草的纖維不同，需要因應情況調整。</li>



<li>艾草的纖維很特別，所以水和粉的用量因應情況調整。手粉的份量很多，除了當手粉外，還可以用來調整粉團的濕度、軟硬度。</li>



<li>使用75克塑膠圓模，艾草皮和餡料大約50克、18克，不大不小，也不會太厚。</li>



<li>用客家傳統煮羹糊方式處理粉團，粉團特別柔軟好揉，也不會乾裂。這也是我很喜歡的方式。</li>



<li>粉的比例很好，蒸好後艾草果不會軟趴趴，能維持清晰而漂亮的花紋，吃起來糯中有Q，甚有咬感。</li>



<li>用木印模要特別注意防黏，可以多用手粉，或刷上一層油，都有不錯的效果。手工木刻的傳統模具特有一番味道，不是塑膠模可以媲比的純樸、美麗。</li>

<p>我很少蒸芋頭糕，因為講究材料，材料決定了成品的好壞，<strong>不是你的廚藝不好，是原材料誤事</strong>，讓你白費了一埸心思，蒸出來的芋頭糕平平無奇。用了極多芋頭和餡料，手切芋頭絲，自己打米漿，無論原料或做法都費時、費工夫，但口感和香味是無敵的，是市售的無法相比的。</p>

<p><strong>有些糕不是年年蒸，也不是年年吃的，需要天時地利人和才能成事。</strong>為了吃上一個好糕，我會等待。年前竟然得到了一塊大芋頭（砲彈芋頭），一定不能浪費了這塊好料，立馬決定用來蒸芋頭糕，準備蒸糕過年，也滿足自己的慾。</p>

<p><strong>客家芋頭糕配料上偏鹹又濃味，材料沒有廣式芋頭糕來的花巧，但製作過程傾盡心力，令人回味無窮。</strong>成品的品質與色澤常受芋頭品種而影響，故製作時要選對好的芋頭品種，質地鬆軟的最好，台灣的檳榔芋和廣西荔浦芋非常粉糯，很適合用來蒸芋頭糕。至於芋頭是否用心刨絲或切丁，並沒有一定，自己方便處理最重要。</p>

<p><strong>芋頭糕煎來吃是傳統吃法</strong>，若要配沾料吃，簡單就好，因為已經很夠味了。如怕上火，蒸熱吃很好，煮湯料也很好吃。<strong>此食譜蒸出來的糕，很好煎，可以煎得面面焦黃，酥酥脆脆。</strong>冰箱冷藏後也不會硬蹦蹦，還是很柔軟，富有彈性。可以想像得到，一口咬下去外酥內軟，鹹香濃郁，一點都不會膩。（嘩～不自覺地吞口水喔。）</p>

<p><strong>芋頭</strong>削皮，對半切開，切成細絲；<strong>乾香菇</strong>浸軟，搾乾水份，切成片，再用糖抓均勻；<strong>臘肉</strong>切成丁；<strong>蝦米</strong>用清洗去表面灰塵，再切碎。</p>

<p>將香菇放入油鍋炒出香味、微焦黃後，放入蝦米和臘肉炒，陸續放入餘下的分三之一鹽 、白胡椒粉等調味料 ，再沿鍋邊灒酒，繼續炒一下，最後加入芋絲炒至變軟、上色，餡料就炒好了。</p>

<li>不同厚度的糕，以及使用的模具、蒸具等蒸煮時間有所不同，要按情況調整。</li>



<li>檢查是否已蒸熟，可用筷子插入其中，筷子上若無白色的生漿表示已經熟了。</li>



<li>白胡椒粉不建議少放，鹽可以添加到20克，味道更鹹香。這是地地道道的客家味。</li>



<li>炒餡料時，香菇先炒香再和其他材料一起炒，鍋邊灒酒會讓餡料炒得更香。</li>



<li>芋頭很硬，很難切，先對半切開再切成薄片，就很容易切成細絲。</li>



<li>白米和糯米粉的用量不大，芋頭和米漿煮成團後，放入模具要壓緊實，蒸出來才不會鬆散。用飯勺就很好用，不沾不黏。</li>

<p><strong>傳統講究「意頭」</strong>，很多食材會因外形、名稱被認為帶有吉祥、美好的喻意，而被受大眾喜愛。 廣東人稱男丁為「慈菇椗」，表示燈火後繼有人，是值得慶賀的。 </p>

<p>慈菇又作茨菇或茨菰，<strong>客家人叫「芽菇」（音NGA KU）</strong>，是季節性食材 。入冬以後家家戶戶都會煮來解饞。 慈菇富有澱粉質，入口苦澀，苦後甘香，帶點清香，常與芹菜、蒜等蔬菜和五花腩來炆煮，或加臘肉一起炒，是廣東客家人的家常菜。</p>

<p><strong>小時候，不喜歡吃慈菇，尤其那個「椗」，可是最苦最澀，</strong>曾抱怨問過媽媽為什麼不切「椗」。一些家婆非常講意頭，煮這個菜時都不能割掉慈菇的「椗」，沒有椗，代表沒有後。原來是「不能沒後」，難以忘懷。</p>

<p><strong>兒時的記憶，傳統的喻意，還是作為食物的滋味，我都喜歡。加上年紀漸長，生活體驗多了，更是愛那苦味，更能吃出苦的滋味，苦盡甘來的感悟。</strong>慈菇的苦澀不難吃，而且獨特，苦中帶甘，味中帶香，遠遠勝於一味甘甜，尾韻餘香。如與五花腩同炆，掛上了濃油赤醬的肉汁，那口慈菇，鹹香粉糯，苦後回甘，真的是回味無窮！怪不得入冬後，家裏的老一輩總愛吃，過年又煮上一盤。</p>

<li>慈菇切芽、削皮，浸洗清水，一分為二或一分為四備用。</li>



<li>蒜苗切段；薑片切六片；五花腩切厚件備用。</li>



<li>熱鍋下油，爆香薑片、蒜白，再放入五花腩煸炒片刻。</li>



<li>沿鍋邊濽酒，放進慈菇炒均勻，</li>



<li>加入南乳、蠔油和一點點清水壓扁爆香，再大火爆炒至上色、出香味。</li>



<li>加清水覆蓋、蒜葉煮沸後，下鹽調味，中小火炆約15分鐘至慈菇變軟。&nbsp;</li>



<li>少許醬油上色，大火收乾水份，勾薄芡炒均即成。</li>

<p>清明前後，雨水充足，雞屎藤（又稱雞矢藤、雞香藤）長得極好，尤多新枝嫩葉，香港的客家人會用來做茶果，用來拜祭、供奉祖先。臨近清明，故又稱為「清明仔」。</p>



<p>雞屎藤的葉子被揉碎之後，就會散發出一種雞屎的臭味，雞屎藤的名字也由此而來。但是，做成茶果後有清香的氣味。<strong>客家人很有智慧，把草藥做成吃食，除了果腹、便攜、利存，還有藥用價值，強身健體。</strong></p>



<p>小小一顆圓球，以甜吃為主，只下片糖，食口感、草香、藥用價值，包了餡料反而畫蛇添足。簡而美。當然，你可以包餡的。</p>



<p><strong>老人家的茶果都是沒有食譜，只有大概的比例</strong>，相同的食材，在不同時節，會根據手感去調整用量。所以，每一次向他們討教，總是得到「差不多」、「大概」、「一點點」之類的話語，並非藏私，<strong>而是說不來的經驗才是真正的食譜</strong>。</p>



<p><strong>我的食譜雞屎藤用量較多（傳統做法），要做出好吃、有口感的茶果是需要「經驗」。</strong></p>

<p>客家名菜——芋頭扣肉，用到了芋頭、豬肉，都是客家人飯桌上常出現的食材。適逢大時大節，尤其是過年的時候就會一大家子就會架鍋準備這道年菜，或者紅白二事的宴席上必定出現這道菜。記憶中，裝滿芋頭扣肉的大碗公一個一個整整齊齊地排在大灶，通常一蒸就是一下午，原鍋放在到明天，上桌前再蒸熱。那滋味到現在還記憶猶新：五花肉肥而不膩，芋頭咸香、粉糯…… </p>

<p>現在紅白二事都選擇去酒樓各酒店請桌，要吃只能自己動手做了！ 每家都有自己的秘方，但是一定少不了用腐乳、醬油及米酒調。我分享了我家、家鄉的味道。</p>

<li>醬油 2湯匙 </li>



<li>蒜泥 3湯匙 </li>

<li>糖 1湯匙（我用了一顆冰糖／20克）</li>



<li>米酒 1湯匙</li>



<li>老抽 1湯匙（上色）</li>
