<p><strong>只需要糖、蛋白兩種材料</strong>就能做出蛋白糖，超逼真的小甜點，吃起來「咔嚓⋯⋯咔嚓」脆脆的，聽聲音就很療癒了。胖嘟嘟的外型也十分可愛、討喜，就是捨不得吃⋯⋯ 用來裝飾蛋糕很可愛，也讓蛋糕多了一種口感。對了，這次我是用來裝飾樹頭蛋糕。</p>

<p>拿了幾顆，用來裝飾蛋糕，超級漂亮。其他包裝起來，用來分送人。用來配咖啡也是不錯的！</p>

<p>烤這種蛋白糖主要是用來哄小朋友的，討好他們的小魔法。派糖的姐姐，哪個小朋友不喜歡呢！想討好小魔怪，不難！只要手裏有糖，特別的糖——蘑菇蛋白糖 。看到他們歡天喜地撕開包裝，小嘴一咬就「咔嚓」，「噢！是脆糖耶！」，接著哈哈大笑⋯⋯吃得開心，我就開心、滿足了。</p>

<p><strong>盛夏談了一場戀愛，好像初戀。</strong>淡淡的、甜甜的，蜜蜜的。吃了一口龍眼冰，清爽涼口，入口即化，桂花香若隱若現⋯⋯朝思暮想，心心念念。</p>

<p>一點都不誇張，我終於盼來了龍眼，年年想念的龍眼冰與桂花香。簡單到只需要把材料用攪拌機打碎和拌勻，放入冰箱冰凍一晚，享用時挖起，加上桂花凍、龍眼肉，味道、口感及賣相好極了！</p>

<p>一碗桂花龍眼冰（Osmanthus Jelly and Longan Shaved Snow）<strong>非巧手才能製作，也不是什麼昂貴材料，卻賞心悅目，清心涼夏</strong>。龍眼冰是手工雪花冰，沒有機器的製作，絲絨般的質地在舌尖融化，還散發甜蜜清香⋯⋯<strong>會想念是有原因的</strong>。</p>

<p>對於龍眼，我的記憶是甜蜜的夏天。家裏有一棵很老的龍眼樹，是阿公年青的時候種下，記憶一直都是那棵龍眼樹。一到夏天，特別盼著龍眼成熟，可以品嘗蜂蜜般的甜美，卻很少買市面上的。廣東人家裏有不少果樹，龍眼樹也是看家的果樹之一，所以都可以收到親戚家的贈果。</p>

<p>疫下三年，已三年沒有吃到龍眼。終於，今年從表哥家搬了兩大箱龍眼回家。除了直接外，心滿意足地用來泡酒、釀酒，因為可以保存很久很久，隨時可以回味。桂花龍冰當然不能少，也拍了影片分享，與大家分享這碗清爽甜蜜的愛。</p>

<p><strong>龍眼冰的初形起於童年</strong>。那時，把龍眼肉冷凍，加牛奶打成沙冰，冰冰涼涼，甜甜蜜蜜，非常喜歡，更是喜愛到不得了。後來加入了一些椰漿，味道就更香了！有一段時間，迷上了椰子香，什麼都要椰子口味的。再後來，自己在家做冰淇淋，接觸到鮮奶油，開始也加入一些，才有了這龍眼冰初形。歷時多少了年了？應該有十幾年？不曉得！材料一直在改進、修改，質感也豐富不少。</p>

<p>從小就喜歡「搞東搞西」。迷上椰子的那段時間，還用椰子汁蒸雞翼，味道已沒有記憶，卻記得很滿意，還與同學分享這發現。我也深深迷戀喜歡果凍、晶凝通透的一切。</p>

<p>作為一個香港人，怎麼會沒食過香港街頭小食（Hong Kong Street Food ）咖哩三寶（Curry Three Treasures）或咖哩魚蛋（Curry Fish Balls）呢！放學或下班，最喜歡去「<strong>篤魚蛋</strong>」，有三寶更正。<strong>平民小食</strong>，滿滿的回憶⋯⋯</p>

<p>我最喜歡就是放學後在街上「篤串魚蛋」才回家，或者要趕著去補習班，先吃點東西墊墊肚子。當時，最開心是與同學買一份咖哩三寶一起吃，滋味又滿足。那時，一串咖哩魚蛋才港幣5元，加價到10元一串時，我已經很少光顧了。</p>

<p>第一次吃咖哩三寶是在一家車仔麵。那是學校運動會，可以在外吃午餐，同學極力推薦一間小型車仔麵檔，只賣外賣，沒有座位。沒想到，除了魚蛋，咖哩與白蘿蔔、豬皮是如此相合，真的吃過就回味無窮！我可試著在家裏做，不至於食幾口就沒了，而且捧場客很多，不愁沒有銷路。</p>

<p>無私分享秘製咖哩底，自己炒製的咖哩醬真的超級好食！這是試過很多家品牌的咖哩粉、咖哩醬才得出的食譜，不單單用咖哩粉，還要加上沙嗲醬和一些辛香料味道才好。至於咖哩粉，推薦用<strong>老師父或田師傅</strong>，味道特別香又顏色深，是我常備的調味粉；沙嗲醬更是我私藏的好料——<strong>利川花生沙嗲醬（Lee Chun Peanut Satay Paste with Peanut）</strong>，又是少見的香港製造，這是偶然發現的寶物。某日閑閑逛街，在佐敦一家傳統雜貨店與它相遇，自此一見鍾情，用它做咖哩魚蛋及三寶簡直是神來一筆！味道又香又辣，也不用額外添加辣椒。</p>

<p><strong>要咖哩三寶好食，炒咖哩底非常關鍵</strong>。最重要是用小火慢炒，慢慢地炒香醬料，不能心急，一心急就會炒糊，醬料及辛香料都很細碎，不好炒，關鍵是油要多，油多了容易炒，也份外香。細細爆香乾蔥、蒜頭，然後加入咖哩粉等慢炒，炒到油醬分離即可，炒好鬼咖哩醬油滋滋的，需時約30分鐘。再加入三寶一番爆炒，後加入適量清水炆煮，煮到白蘿蔔變透、軟，就差不多了。最後，再收汁埋芶，可以大快朵頤。家裏製作味道翻倍再翻倍。</p>

<p>㊙麵團處理有技巧、心得｜<strong>不用手粉、不黏、不破皮</strong>｜<strong>皮薄餡滿</strong> Chinese Chive Pocket</p>



<p>韭菜盒子非常家常，有韭菜就能包，各家各有做法，煎的、烙的、炸的都有，還聽過蒸的。要皮薄餡大，麵團處理是有一些小技巧，就<strong>很容易擀薄、不破皮</strong>，也完全不用手粉。我最喜歡干烙，最後再稍為油煎一下，<strong>外脆內軟</strong>，外皮咬下去「咔嚓！咔嚓！」，裏面卻是軟軟韭菜、彈牙的粉絲，滿嘴香。</p>



<p>用沸水燙麵，麵粉分次混合，揉成不黏手的麵團。可以不用手粉，完全不黏手、案板，對於很怕處理麵團的人，很好上手及容易操作，成品也會漂亮。麵團的特點，不黏、延展性好，卻不會軟趴趴，很像泥膠。</p>



<p>除了做成韭菜盒子，也可以用來包餃子，擀皮也是一樣的操作。如果你喜歡有點厚度的餃子皮。無論是水煮、煎餃都一樣好食。</p>



<p><strong>這食譜是家常、簡單及不易失敗的，麵團容易塑形，成品酥香。</strong></p>
