<p><strong>米和水的<strong>黃金比例</strong>是1：1，<strong><strong>適</strong>合</strong>大部分的米</strong>。每個人喜歡的米飯口感，以及米的吸水性都略有不同，需要因應喜好、米種和食材的水份調整水的用量。這次用珍珠米，米和水的比例為1：0.9左右。煮米飯，無論用什磨鍋具，煮之前都稍為浸泡一下，米會煮得更透。只要多煮幾次，就可以煮出喜歡的炊飯。</p>

<p><strong>這鍋飯吃得真香！除了眼前的飯香，遇有回憶中的飯香</strong>。小時候，母親忙著準備過年，沒時間煮飯，就炆一鍋碗豆飯打發。對於小孩而言　簡直是天上的美味！特好吃，特能吃，吃了一碗又一碗，小小的身板可以吃上三碗，還會與弟弟比賽，看誰吃得多。阿公笑咪咪地看著我姐弟倆，飯也不知不覺吃多了。這飯真香！</p>

<li>醬汁可以先備好或趁煮飯空檔準備。醬油、米酒、麻油、糖混合均勻備用。</li>



<li>米洗淨，稍瀝水份後，放入鑄鐵鍋，加入清水浸泡。</li>



<li>蒜苗、芹菜也切細，臘肉、紅蘿蔔切丁備用。</li>



<li>在米中倒入米酒，鋪上臘肉，再鋪上碗豆，加入紅蘿蔔，用中火煮至水開。</li>



<li>水開後，轉小火蓋鍋蓋煮15分鐘。</li>



<li>時間到後，關火不開鍋，燜15分鐘。</li>



<li>時間到後，淋上醬汁，加入蒜苗、芹菜，最後燜5分鐘。</li>



<li>打開翻鬆即可享用。</li>

<li>煮飯加點米酒煮好的米飯會更香﹐醬汁也是。</li>



<li>芹菜和蒜苗是這鍋炊飯的靈魂，誘人香氣之所在，多些更會更香。</li>



<li>半肥半瘦的臘肉比較好切，太瘦會硬崩崩，很難切細，可先蒸軟再下刀。</li>



<li>臘肉帶點肥肉，才是好吃，煮出來的米飯也更香Q。</li>
