<p>每階段的糖漿變化，可以看影片。我會簡單劃分，更易觀察糖漿達到合適的温度，做法非常脆的口感。就算糖少，聲音也也可以非常清脆。</p>

<p>黑芝麻可以增加堅果風味與酥脆口感，尤其是<strong>炒熟的黑芝麻香氣更佳</strong>，無論是搭配拌飯、涼拌菜或是製成芝麻球、芝麻湯圓或是脆糖等等，都是很好取得的食物來源！烘烤黑芝麻也很容易烤過了，還是下鍋炒來得容易及香氣更甚。 你喜歡烤也可以，就是沒有下鍋炒來得香。</p>

<li>糖的用量不建議少了，否則芝麻會黏合不來。</li>



<li>模具、烘焙紙和麵杖擀提前備好，方便快速整形。</li>



<li>取麥芽糖要先沾濕手，再直接抓取、稱重。</li>



<li>熟芝麻也下鍋炒出香出，成品更香。</li>



<li>糖漿煮時加水有助於均勻溶解糖。</li>



<li>煮糖漿時不要攪拌，否則糖會結晶。</li>



<li>炒好的芝麻要放入已預熱的烤箱中100～120°C烤箱中保温，方便後續操作。</li>



<li>整形時，若糖漿開始變硬，可以放回烤箱，直到糖漿回軟可以拌勻的狀態。</li>

<p>這次分享的「勁薑黑糖年糕」<strong>還原祖母的客家大粄做法</strong>，<strong>古早味道濃厚，味道天然、古樸，口感十足，適合小家庭、城市人的蒸糕。</strong>蒸好的年糕的口感隨時間變化，口感極好，親友吃過也讚不絕口，色、香、味俱全，<strong>最喜歡或推薦的食法，是放涼後吃，邊嚼邊撕掉香蕉葉，蕉葉清新夾著黑糖焦甜。</strong>尤其是剛蒸好放涼後的狀態切片吃，不煎不炸，最能吃到原始的風味和年糕的Q彈口感。</p>

<p>從小就吃著吃古法年糕長大，對於年糕的有一份執著，特別是用糯米粉的年糕，有些偏愛，也有執著點。<strong>如果你問我，哪家年糕好吃，我會說記憶中的最好吃！</strong>以前看著客家婦女指揮著家裏的男丁攪拌粉糊，就算是寒冬也能攪出一身汗，就算未品嘗，也能想像到那籠大粄一定是非常好吃。有些食物，非講究用料，反而是見證了、參與了製作過程，一切都會是人間美味。</p>

<p>年糕材料豐儉由人，但我還是拿出珍藏的黑糖來蒸年糕，手法就可以用木棍（擀麵杖）攪粉和粉水，一點一點攪和，把麵糊充份攪均至有靭度，用傳統方法做的年糕就是好吃，有付出就有韌度，就能做出口感極佳的糕，一樣可以達到煙韌的效果。與祖母的大粄不相伯仲，就是缺了點火候和柴火味，還有幾十年的經驗。</p>

<p><strong>傳統客家大粄材料很簡單</strong>，就用糖和糯米粉，用香蕉葉墊底，用柴火大灶，至少蒸足一日一夜，大粄會焦化，白色大粄會變成琥珀色。依照方法，加入了大量新鮮薑汁，蒸成<strong>勁薑黑糖年糕，甜美香糯之餘，更有勁薑尾韻，暖胃袪寒 </strong>，如加入椰漿就可以蒸成「<a href="https://youtu.be/wE7rYbEfcag?si=WJS8MBGCPtYebPKU">椰汁黑糖年糕</a>」，也很喜歡。</p>

<p>一蒸客家大粄就是動員家族人員的時候，材料份量十分碩大，以前吃的人多，分送的親人也多。<strong>現在把年糕的材料、大小都縮小，做起來容易了，也不會攪出一身汗。</strong>現時物資豐盛，也吃不了多少，一個就剛好小家庭過年。</p>

<p>➊  此食譜用全薑汁，薑味勁濃，可依個人喜好以水代替部份薑汁。</p>



<p>➋  怕薑味太辣，也要加多一點黑糖，減少辛辣後勁。</p>



<p>➌  剛蒸年糕較軟，放待涼後口感會慢慢變化。首一、兩天放室温直接吃，口感最佳。之後，可以放入冰箱冷藏，蒸熱放涼或香煎或炸都可以。</p>

<p>  第一次吃紅棗糕是在茶樓飲茶，點了一籠蒸的紅棗糕，未到桌已聞到紅棗的香甜，吃起來很煙韌、軟糯，那滋味久久不忘⋯⋯每上茶樓總會在點心紙上尋找它的身影。有幾年新年時，會收到表哥送的棗皇糕券，真的非常好吃！過年，我都在期待他送的棗皇糕。自他結婚後，家裏就再也沒收到了，該是女主人有新的安排吧。</p>



<p>  紅棗非常香甜，很可口，很容易接二連三地吃個不停，吃多了會上火，會口乾舌燥。記得有一次，買了一大包新彊大紅棗，真的很大顆，又香、又脆、又甜，吃著吃著就幾乎吃光光了。哪會知道，明天臉上就冒起幾顆大顆痘痘，又紅又腫，鼻子也快要噴火。後來，才知道不能一次吃太多，一天兩三顆點到即止，多了會上火、燥熱。</p>

<p>  有了那次的教訓，紅棗一不小心吃多了，必馬上喝碗涼茶下火。</p>



<p>  賀年食品，免不了油炸、油煎，蒸上幾個這紅棗糕送禮，絕對大方、得體，也得健康養生。明打著「健康養生」、「養顏美容」的名堂，有誰不喜歡！有哪一個會說不好吃？而且，無油、少糖，清爽得很，多吃幾塊也沒有心理負擔喔。</p>

<li>冷藏後的紅棗糕會稍硬身，吃起來爽口，顏色會發白、不通透。但再加熱後，會轉回晶瑩剔透，糕體回軟。&nbsp;</li>



<li>黑糖可以增香添味，少許就可以了。黑糖和紅棗的味道很搭配。</li>



<li>馬蹄粉，結晶體大。粉漿需要過濾兩三次，才會有細緻、順滑的粉漿。</li>



<li>紅棗糕蒸熱吃、放涼吃、冷藏吃各有不同口感、優點。個人最推薦夏天冷藏吃、秋冬蒸熱吃。油煎也是可以，只是較為油膩，看個人喜好。</li>
