<p>香港人喜歡吃火鍋，對於這鍋甜甜的日式火鍋也是十分著迷，而且材料健康、家常。相對港式火鍋，我更愛日式火鍋——壽喜燒的健康、樸實及自由。<strong>假日的早上起來，發現天氣變冷了，這時煮一鍋壽喜燒，既温暖又美味。</strong></p>

<h2 class="wp-block-heading">⫸  <strong>什麼是壽喜燒</strong>  </h2>



<p>壽喜燒是一種日式火鍋，又稱為鋤燒（日语：<strong>鋤焼き／すきやき&nbsp;<sup>Sukiyaki</sup></strong>），是一道<strong>備受喜愛的日本傳統的料理之一</strong>。食材一般是牛肉、豚肉、大蔥、豆腐、蒟蒻絲和蔬菜等等，再配合醬油、糖、味醂等混合而成的靈魂調醬汁一起烹煮的料理。在日本喜歡配合米飯一起食用，一道十分適合在冬天多人一起享用的家常料理。</p>



<p>若遇到值得慶祝的事時，通常會吃「壽喜燒」，食材更會出現高級牛肉。壽喜燒很適合年末與家人、親朋好友團聚。圍著坐，吃著壽喜燒，喝點小酒，聊著往事。</p>

<h2 class="wp-block-heading">⫸  道地日式壽喜燒  </h2>



<p>道地的壽喜燒，常用導熱及保溫性強的圓形厚底淺鍋（鑄鐵鍋），食用時不加水，僅透過洋蔥、蔬菜及豆腐等天然食材釋放出的水份，與其它食材慢火熬煮。因地域差異，壽喜燒分可分為「關東」和「關西」兩種不同風味的做法。</p>

<li>關西 : 常將牛肉煎至約 80% 熟，之後才開始放其他材料，然後慢慢調味。</li>



<li>關東 : 先加入壽喜燒醬汁，再放入牛肉、豆腐、蒟蒻絲和蔬菜等一同煮至熟。</li>
</ul>



<p>兩者相同之處，食用時都沾生雞蛋液。其實，餐廳和家庭都有不同的做法，也很難一概而論。</p>

<p>* <strong>味醂：清酒：醬油：水＝1：1：1：2 ，以50克 醬油例，加入1 湯匙砂糖</strong>，味道依個人口味調整。</p>

<p>*<strong>醬油</strong>有分日式<strong>、</strong>中式。日式較清、甜，使用中式醬油需要調整一下。<strong>清酒</strong>可以淡化的米酒代替（40 克米酒＋10 克清水），或喜酒香也直接替代。<strong>清水</strong>是最簡單和方便，如昆布高湯就更美味。說了那麼多，家裏隨意、自在就好。</p>

<li>材料清洗備用。</li>



<li>切成方便吃的大小，如南瓜切厚片、香菇切十字花。</li>



<li>熱鍋：鍋裡放入一塊奶油煮化，加入牛肉片稍微至8成熟，夾起牛肉。</li>



<li>加入洋蔥或大蔥，並加入砂糖一起炒焦，再加入醬汁煮開。</li>



<li>加入一些較耐煮食材，如南瓜、芋頭、蒟蒻絲和紅蘿蔔等。</li>



<li>陸逐加入蔬菜，如大白菜和茼蒿等等。</li>



<li>最後將把煎過的牛肉放入，蓋上鍋蓋加熱，煮熟就可以吃了。</li>
