<p>又香又甜的糖心地瓜湯圓最誘人，內外兼備，圓圓滿滿。湯圓中間包了一小顆片糖，<strong>咬開煙韌Q彈的糯米皮，就會露出一顆半融化的片糖，脆脆甜甜的糖心，那下真是甜蜜幸福呢！</strong>大湯圓不需要的甜湯襯托，外在的添加都是多餘的，自己就能<strong>獨當一面</strong>，撑起一碗糖水。</p>

<p>包湯圓說難不難，說易也不易，看各家要求、所好。很多人都說，湯圓很容易包，就是用糯米粉加水就可以揉成為粉團。但要包得圓渾和飽滿，煮過也不破皮、變形，還能保持原來的形狀，白玉脂皮中微透粉橘，口感也特别煙韌彈牙。糯米麵團的處理就有些技巧，不用粄母，直接燙熟，再揉成半熟粉團等丟等。<strong>我也不藏私，一一分享，包你學會。</strong></p>

<p>⑧  取一份糯米粉掌心搓圓、壓扁，窩成帽子狀，放入一顆內餡後，左手姆指壓住內餡，右手虎口往上收口、轉動，最後搓圓。每顆湯圓約30克。</p>

<p><strong>𝟭  </strong>每一品牌的糯米粉吸水性均不同，因應特性酌量增減糯米粉的用量。</p>



<p><strong>𝟮 </strong> 做好的湯圓可以滾上一層薄薄的糯米粉陪沾、防乾。</p>



<p><strong>𝟯  </strong>湯圓做多了，一次吃不完，可以直接冷凍起來。</p>



<p><strong>𝟰  </strong>中間的片糖可以煮至完全融化，咬下去完全是糖流心。</p>



<p><strong>𝟱  </strong>湯圓皮要比內餡大約2倍，才能包得漂亮，口感也較好。</p>



<p><strong>𝟲  </strong>太大或太小都不好包，也不方便吃，約30克一個剛剛好。</p>



<p><strong>𝟳  </strong>按照上述的順序，時間都剛剛好，一步接一步，可以在一小時左右做出湯圓。</p>

<p>一點都不誇張，我終於盼來了龍眼，年年想念的龍眼冰與桂花香。簡單到只需要把材料用攪拌機打碎和拌勻，放入冰箱冰凍一晚，享用時挖起，加上桂花凍、龍眼肉，味道、口感及賣相好極了！</p>

<p>一碗桂花龍眼冰（Osmanthus Jelly and Longan Shaved Snow）<strong>非巧手才能製作，也不是什麼昂貴材料，卻賞心悅目，清心涼夏</strong>。龍眼冰是手工雪花冰，沒有機器的製作，絲絨般的質地在舌尖融化，還散發甜蜜清香⋯⋯<strong>會想念是有原因的</strong>。</p>

<p>對於龍眼，我的記憶是甜蜜的夏天。家裏有一棵很老的龍眼樹，是阿公年青的時候種下，記憶一直都是那棵龍眼樹。一到夏天，特別盼著龍眼成熟，可以品嘗蜂蜜般的甜美，卻很少買市面上的。廣東人家裏有不少果樹，龍眼樹也是看家的果樹之一，所以都可以收到親戚家的贈果。</p>

<p>疫下三年，已三年沒有吃到龍眼。終於，今年從表哥家搬了兩大箱龍眼回家。除了直接外，心滿意足地用來泡酒、釀酒，因為可以保存很久很久，隨時可以回味。桂花龍冰當然不能少，也拍了影片分享，與大家分享這碗清爽甜蜜的愛。</p>

<p><strong>龍眼冰的初形起於童年</strong>。那時，把龍眼肉冷凍，加牛奶打成沙冰，冰冰涼涼，甜甜蜜蜜，非常喜歡，更是喜愛到不得了。後來加入了一些椰漿，味道就更香了！有一段時間，迷上了椰子香，什麼都要椰子口味的。再後來，自己在家做冰淇淋，接觸到鮮奶油，開始也加入一些，才有了這龍眼冰初形。歷時多少了年了？應該有十幾年？不曉得！材料一直在改進、修改，質感也豐富不少。</p>

<p>從小就喜歡「搞東搞西」。迷上椰子的那段時間，還用椰子汁蒸雞翼，味道已沒有記憶，卻記得很滿意，還與同學分享這發現。我也深深迷戀喜歡果凍、晶凝通透的一切。</p>
