<p>烤火雞不難，我用家庭小烤箱KENWOOD MOM880BS 也成功烤了一隻 5.663 kg的火雞，讓我十分雀躍，下一年也要繼續烤、繼續吃。火雞不用特別處理，只要提前3～4天放冰箱冷藏層解凍，吃的當天才著手處理，都能烤熟火雞，而且肉嫩多汁。 </p>

<p>烤一整隻火雞過節是最完美的、愉快！火雞與普通雞價格相約，臨近聖誕節時在大部分超市有售。因應處理條件、食材準備和時間安排，拋棄繁複的處理，就算<strong>臨近佳節</strong>，生活、工作<strong>非常忙碌</strong>，也<strong>可以在慶祝日烤一隻大火雞捧上餐桌，成為晚餐一大亮點</strong>。前期工夫不多喔～</p>



<p>烤火雞一點都不難，工夫不多，大致的流程如下：</p>

<p>第一次烤火雞，就非常滿意，畢竟<strong>家庭小烤箱也能烤一整隻火雞</strong>，真的太開心了！以前總是礙於烤箱太小，只能烤烤火雞翅、小雞，看到大大隻的火雞就只能看看！畢竟，原來的烤箱塞不進一隻火雞。這買了新烤箱之後，想<strong>挑戰烤大大一隻的火雞</strong>，在冰櫃區與火雞相遇就毫不猶豫地把火雞買回家，不再是擦而過。</p>



<p>平時小雞烤多了，大雞自然沒有難度，只是調味和配料的份量要加倍再加倍。另外，<strong>注意到火雞的味道、口感，最後敲定了檸檬香料為主軸</strong>。</p>

<p><mark style="background-color:var(--theme-palette-color-1, #6c5aa8)" class="has-inline-color has-palette-color-8-color">Step 1.</mark> 整隻火雞放冰箱冷藏層解凍3～4天（5.663 kg /12.38 LBS ）。</p>



<p><mark style="background-color:var(--theme-palette-color-1, #6c5aa8)" class="has-inline-color has-palette-color-8-color">Step 2.</mark> 打開層層包裝，取出火雞腎、肝（兩大包）及頸，用清水沖洗乾淨。內臟我會留起另用。</p>



<p><mark style="background-color:var(--theme-palette-color-1, #6c5aa8)" class="has-inline-color has-palette-color-8-color">Step 3.</mark> <strong>置室温風乾</strong>（如時間許可，可以風乾一整天）。火雞太大，我用一個酒瓶來架起火雞，大小非常完美，豎立整隻雞，雞腔內的水份也很順利流出。</p>



<p><mark style="background-color:var(--theme-palette-color-1, #6c5aa8)" class="has-inline-color has-palette-color-8-color">Step 4.</mark> 把蔬果切大塊，份量都隨意。</p>



<p><mark style="background-color:var(--theme-palette-color-1, #6c5aa8)" class="has-inline-color has-palette-color-8-color">Step 5.</mark> 將新鮮迷迭香切碎，加入奶油中、蒜混、檸檬皮及海鹽混合成<strong>香料奶油</strong>備用。</p>



<p><mark style="background-color:var(--theme-palette-color-1, #6c5aa8)" class="has-inline-color has-palette-color-8-color">Step 6.</mark> 用廚房紙巾進一步印乾水份。</p>



<p><mark style="background-color:var(--theme-palette-color-1, #6c5aa8)" class="has-inline-color has-palette-color-8-color">Step 7.</mark> 在<strong>雞腔內</strong>撒上海鹽/玫瑰鹽、黑胡椒粉<strong>調味</strong>，再<strong>塞入檸檬、蘋果、柳丁、洋蔥及新鮮迷迭香</strong>。我還塞了一把西芹葉。盡量塞緊實，以支撐起雞腔。蔬果塞不進雞腔就放烤盤上一起烤。</p>



<p><mark style="background-color:var(--theme-palette-color-1, #6c5aa8)" class="has-inline-color has-palette-color-8-color">Step 8.</mark> 把外皮和肉分離，在皮肉間塞入香料奶油，用手推送到各部位，填滿全雞。尤其雞胸、雞腿要多<strong>填塞奶油</strong>。</p>



<p><mark style="background-color:var(--theme-palette-color-1, #6c5aa8)" class="has-inline-color has-palette-color-8-color">Step 9.</mark> 準備一條烤繩，把兩隻雞腿交叉<strong>固定</strong>綁好。</p>



<p><mark style="background-color:var(--theme-palette-color-1, #6c5aa8)" class="has-inline-color has-palette-color-8-color">Step 10.</mark><strong> 準備一個大烤盤</strong>（深盤最好），鋪上小紅蘿蔔、西芹，再放上火雞，收好雞翅。把餘下的香料奶油塗抹在雞表面。</p>



<p><mark style="background-color:var(--theme-palette-color-1, #6c5aa8)" class="has-inline-color has-palette-color-8-color">Step 11.</mark> 用<strong>錫紙覆蓋</strong>，送進已預熱的烤箱，180°C烤2.5小時。</p>



<p><mark style="background-color:var(--theme-palette-color-1, #6c5aa8)" class="has-inline-color has-palette-color-8-color">Step 12.</mark> 從烤箱取出，反覆澆淋肉汁，再鋪上煙肉片或煙肉條，鋪滿一整隻雞就更完美，我的煙肉有點少。不用蓋錫紙直接送回烤箱，180°C烤1小時。</p>



<p><mark style="background-color:var(--theme-palette-color-1, #6c5aa8)" class="has-inline-color has-palette-color-8-color">Step 13.</mark> 從烤箱取出，火雞搬離烤盤，蓋上錫紙，<strong>休息30分鐘</strong>左右再享用。</p>



<p><strong>這時就可以去煮醬汁了。</strong>時間會剛剛好～</p>

<p>烤完的火雞的肉汁匯集了蔬果、香料、奶油和雞肉的精華，用來沾火雞就是最好的醬之一，原汁原味。做法非常簡單！</p>



<p><strong>直接隔去蔬果，留汁</strong>，並添加適量黑胡椒和海鹽調味即可。</p>



<p>或者，<strong>把一些蔬果（柳丁、檸檬除外）和烤汁煮開</strong>，加入適量黑胡椒和海鹽調味，加入烤過的煙肉，煮至收汁。在煮的過程中，可以<strong>把蔬果壓爛</strong>，肉汁就會很濃厚。最後，<strong>過濾成汁</strong>。</p>



<p>如果，喜歡再濃稠的醬汁，<strong>添加適量的麵粉</strong>可以更濃厚。可以從一茶匙開始，慢慢調成喜歡的稠度。注意，不用煮太稠，放涼後會更稠。</p>



<p>有些人會把火雞頸也一起烤得焦香，再放入烤肉汁裏煮。我不吃頸項，所以沒有這一部。</p>

<p>買火雞多半會送一大包曼越莓。平時少吃，沒想到與火雞是絕配，一大驚喜，<strong>酸甜可口剛好可以平衡油膩感，也增添風味</strong>。蔓越莓醬是一種甜中帶酸的醬汁，為搭配火雞食用的最好醬汁之一。當然，你可以一次煮一大鍋，用來做甜點、抹麵包都很美味。</p>



<p>蔓越莓很酸，糖的用量要很多，我只用了100克，味道偏酸。小鍋放入曼越莓、檸檬皮、糖及清水，小火熬煮，並保持攪拌，煮至變軟、稠，木匙可以劃出一條不癒合的線。就是這樣這麼簡單！</p>

<p> ❋    敲定用<strong>檸檬</strong>為主軸，因檸檬香氣芬芳，也可以軟化肉質，以致火雞不會過於乾，也添清新風味。檸檬也容易取得。</p>



<p> ❋    冰箱冷藏解凍最少要兩天時間，三到四天是基本，沒有完全解凍是烤不出一隻好吃的火雞的。 </p>



<p> ❋    <strong>香料奶油塞滿全雞</strong>，雞胸部份要更多，烤的時候油脂包裹著肉，滲入肉中，充滿雞身，肉質才能保持嫩滑。</p>



<p> ❋    紅蘿蔔、西芹鋪底，可以墊高火雞，增加熱氣對流，也有配菜伴盤可吃。</p>



<p> ❋    第一次進烤箱先<strong>包裹錫紙</strong>，是為了把火雞烤熟，並避表皮過早烤焦，第二次送回烤箱時去掉錫紙，就能做到皮脆肉嫩。</p>



<p> ❋    從烤箱取出後，<strong>反覆淋上烤肉汁</strong>，再送進烤箱烘烤，顏色才會烤得金黃。</p>



<p> ❋    <strong>休息30分鐘</strong>再享用，是讓油脂、肉汁回到雞的各部位，肉質才不會乾柴，而且肉質軟腍多汁。</p>



<p> ❋    火雞與普通的雞十分不同，除了味道欠缺，脂肪含量少，肉質也比較乾柴，所多用了<strong>大量的水果</strong>，如蘋果、柳丁及檸檬等，一是易取，二是氣味芬芳，可以增加火雞的風味，三是味酸，可以軟化肉質，解決先天不足。四是雞腔不會流失水份。也用了<strong>很多香料和奶油</strong>，這是重要的一環，充滿迷人的香氣，經過烘烤變得兩誘人。香料及奶油的用量還可以再多，整體顏色、香氣會更美妙！</p>

<p>❋   雞腔內塞蔬果也是有些小心得。塞滿蔬果除了可支撐起火雞，烤出來才會立體、漂亮，而且充滿果香。但是，不要把雞腔塞得密不透風，以免阻礙熱氣流走入雞腔內，出現外皮烤焦了，雞腔卻不熟的情況。<strong>魔鬼在小細節，如何塞得多、滿，能支撐起之餘又能烤熟</strong>？就是蔬果切大塊，一股腦地填塞，之間會有一些空隙。</p>
