<p>沒有很重的調味，簡單就可以，味道很自然。用剁的我嫌麻煩，直接用手撕開來吃，<strong>真有在野外烤雞的感覺</strong>。當然，有點儀態就把烤雞一分為二或一分為四，用刀叉吃。</p>

<p>我常到超市買一隻不會太大的雞，簡單調味，放進冰箱醃製一晚，就可以送進烤箱烤了。我覺得很簡單、方便，烤出來的效果非常好，顏色金黃，部分雞皮烤得焦脆，肉汁飽滿。<strong>這食譜是不會失敗的做法和調味。</strong>當然，你要因應雞的大小調整烤的時間，才可以烤出最棒的烤雞。</p>

<li>雞洗淨，用沸水燙一下表皮，讓雞皮緊縮。</li>



<li>把調味料醬油、老抽、白胡椒粉和鹽抹均雞身，包括雞腔，冰箱冷藏腌漬三小時以上，過夜最好。</li>



<li>冰箱取出，把雞剪開和剪去雞腳，攤開在烤架上。</li>



<li>烤箱預熱220℃，烤30分鐘。</li>



<li>雞皮刷上蜂蜜水，反向放入烤箱，220℃再烤10分鐘至表面金黃色。</li>

<p><strong>我打破了火雞不好吃的固有想法。</strong>自從用<a href="https://youtu.be/yCdwaiZlzXA?si=xgsmKsqHl723xcqE">家庭</a><a href="https://youtu.be/yCdwaiZlzXA?si=xgsmKsqHl723xcqE" target="_blank" rel="noreferrer noopener">小烤箱</a>也能烤出一隻肉嫩多汁的火雞後，信心滿滿，不一定按傳統醃製方法，在冰天雪地裏浸泡鹽水，也可以烤一隻非常好吃的火雞。以大多數人的條件，都能把火雞烤好。</p>

<p>傳統醃製火雞都需要幾天時間，這是我所在的地方無法滿足的。在亞洲地區，冬天温度不高，身處香港，居住空間不大，氣候和環境因素已經無法把火雞浸泡在鹽水桶幾天。再加上，各行各業年尾特別忙碌，<strong>當然要快速而簡單的做法，讓火雞在短短2～3個小時就能烤好，就可以有一隻碩大的火雞端上餐桌或帶去大食會</strong>。</p>

<p>特地去花墟買了一些<strong>新鮮松枝</strong>裝飾火雞，回來就用清水養著，屋子充滿木香，精神為之一震，十分療癒。<strong>火雞與松枝搭在一起，節日氣氛滿滿</strong>。</p>

<p>清洗過的雞需要風乾，我是放在室温風乾半日，至少也幾個小時。還要把雞吊起或用酒瓶架起來，讓雞腔內的血水也流出。最後，還要用要用廚房紙巾進一步印乾整隻雞，包括腹腔。</p>

<p>雞皮本有油脂，經過長時間烤，已經流失不少。澆上烤汁（充滿了奶油），油可以把皮烤得脆脆的，高温之下，如炸一樣，烤出一層脆皮。而且，烤化的奶油都是香料的精華，風味卻大大提升。</p>

<p>借鑑了北京烤鴨的做法，刷上脆皮水。以新鮮檸檬汁代替醋，再以熱水調成麥芽糖漿，成為脆皮水，做法和材料平易近人，在家裏容易做到。糖可以讓皮更酥、肉更亮，金黃、漂亮的糖色要用麥芽糖或蜜糖，卻不能不能用白砂糖，效果差天共地。</p>

<p>先用低溫180°C烤把火雞烤熟，以免皮烤焦了而肉不熟。高温會把雞皮的油脂逼出，再澆上熱油、刷上糖漿，把皮烤脆，烤上色。因為是小烤箱，接近發熱管，雞胸位置很容易焦黑，保險起見只用200度反覆刷油、糖漿，每次烤20分鐘。大型的烤箱可以以220°C以上烤出脆皮，一次就到位了，也不用擔心雞身接近發熱管的問題，脆皮效果一定好！</p>

<p><strong>上面的做法是一日之內把雞送進烤穩，如時間充足或講究效果，可以更進一步的，利用❛ <strong>鹽漬 ❜</strong>效果更佳。</strong></p>

<p>鹽漬風乾（Dry Brine），就在雞皮表抹上鹽巴，直接放入冰箱乾醃。鹽可以<strong>軟化肉質</strong>、<strong>留住肉汁、提升風味，也把多餘水分排出</strong>。鹽漬2～3天，直接在在冰箱冷藏風乾，不用覆蓋任何東西，讓火雞裸露在外。這種做法很佔用冰箱空間，也影響日常冰箱使用。雖然補水、風乾效果很好，但不適合一般家庭製作，除非你的冰箱很大或有兩個冰箱。</p>

<li>提前把火雞放冰箱冷藏室解凍約3～4天。</li>



<li>冲洗火雞、取出火雞脖子和內臟。把火雞架在酒瓶上風乾。</li>



<li>準備南瓜填料、香料奶油。</li>



<li>用廚房紙巾拍乾水份。</li>



<li>把香料奶油揉成小球，塞入皮肉之間，推送到各部位。</li>



<li>在雞腔撒入海鹽和黑胡椒調味，將已調味的南瓜餡料填滿火雞腔。</li>



<li>用棉繩把雞腿交叉綁好。</li>



<li>把火雞移到烤盤上，收好翅膀，包裏錫紙，送進烤已預熱 180°C烤箱烤2小時。</li>



<li>去掉錫紙，澆上烤汁（熱油），直接送進烤箱200°C烤20分鐘。</li>



<li>將火雞取出，表皮刷上一層麥芽糖漿，送進烤箱200°C烤20分鐘。</li>



<li>火雞取出後，刷上一層油、麥芽糖漿，200°C烤箱烤20分鐘。</li>



<li>將火雞轉移到大盤，靜置休息 20 至 30 分鐘。</li>



<li>端上餐桌和享用！</li>

<li><strong>各家烤箱的温度、大小不同，烘烤時間、次數及温度都需要調整</strong>。避色皮烤焦了，肉不熟，或者烤得不脆。</li>



<li>火雞靜置休息時，可利用這個時間來煮醬汁，醬汁煮好雞也剛好可以享用。</li>



<li>這次買火雞沒有附送蔓越莓，用冷凍鳳梨煮醬汁，沒想到味道清新，酸甜可口，意外的驚喜。</li>



<li><strong>沒有麥芽糖可以用蜂蜜代替</strong>，目前是用麥芽糖的效果很好。</li>



<li>我非常喜歡奶油、香料混合的味道，所以<strong>用了大量奶油、香料，讓火雞的風味非常棒！</strong></li>
