<p>1.綠豆淘洗乾淨，用清水浸泡，放冰箱冷藏過夜。</p>

<li>綠豆要<strong>浸泡透</strong>，才容易打得細膩。我都會隔夜浸泡，夏天放冰箱保存。</li>



<li><strong>綠豆攪拌得細膩</strong>，比較容易洗出澱粉，所以攪拌機可以打久一些。</li>



<li>綠豆澱粉是凝固成型的關鍵。記得要<strong>搓洗綠豆漿</strong>，只有洗出<strong>足夠的澱粉</strong>才可以凝固成型。</li>



<li>純綠豆澱粉凝固後結實、Q彈，但吃起來的口感是偏軟，入口即化，不會爽口。</li>



<li><strong>綠豆：清水大約是1：2</strong>是不容易出現問題的比例，比較容易控製，不會水水的。</li>



<li><strong>油温不用太高</strong>，容易炸焦。</li>



<li>一定要<strong>裹上低筋麵粉</strong>，才不會炸糊和黏黐。</li>



<li>綠豆糕<strong>不宜久炸</strong>，會爆漿。</li>

<p><strong>盛夏談了一場戀愛，好像初戀。</strong>淡淡的、甜甜的，蜜蜜的。吃了一口龍眼冰，清爽涼口，入口即化，桂花香若隱若現⋯⋯朝思暮想，心心念念。</p>

<p>一點都不誇張，我終於盼來了龍眼，年年想念的龍眼冰與桂花香。簡單到只需要把材料用攪拌機打碎和拌勻，放入冰箱冰凍一晚，享用時挖起，加上桂花凍、龍眼肉，味道、口感及賣相好極了！</p>

<p>一碗桂花龍眼冰（Osmanthus Jelly and Longan Shaved Snow）<strong>非巧手才能製作，也不是什麼昂貴材料，卻賞心悅目，清心涼夏</strong>。龍眼冰是手工雪花冰，沒有機器的製作，絲絨般的質地在舌尖融化，還散發甜蜜清香⋯⋯<strong>會想念是有原因的</strong>。</p>

<p>對於龍眼，我的記憶是甜蜜的夏天。家裏有一棵很老的龍眼樹，是阿公年青的時候種下，記憶一直都是那棵龍眼樹。一到夏天，特別盼著龍眼成熟，可以品嘗蜂蜜般的甜美，卻很少買市面上的。廣東人家裏有不少果樹，龍眼樹也是看家的果樹之一，所以都可以收到親戚家的贈果。</p>

<p>疫下三年，已三年沒有吃到龍眼。終於，今年從表哥家搬了兩大箱龍眼回家。除了直接外，心滿意足地用來泡酒、釀酒，因為可以保存很久很久，隨時可以回味。桂花龍冰當然不能少，也拍了影片分享，與大家分享這碗清爽甜蜜的愛。</p>

<p><strong>龍眼冰的初形起於童年</strong>。那時，把龍眼肉冷凍，加牛奶打成沙冰，冰冰涼涼，甜甜蜜蜜，非常喜歡，更是喜愛到不得了。後來加入了一些椰漿，味道就更香了！有一段時間，迷上了椰子香，什麼都要椰子口味的。再後來，自己在家做冰淇淋，接觸到鮮奶油，開始也加入一些，才有了這龍眼冰初形。歷時多少了年了？應該有十幾年？不曉得！材料一直在改進、修改，質感也豐富不少。</p>

<p>這次，是為了冰淇淋而煮的果醬。也消耗了一部份荔枝！今年荔枝大造，荔枝掛滿枝，家裏冰箱也存了大箱，反正就吃不完。</p>

<li>荔枝糖份高，甜美多汁，所以沒有加糖，可以按個人喜好加糖熬煮。</li>



<li>糖愈多，果醬保存時間愈長。</li>



<li>放涼後，放冰箱冷藏儲存。手工果醬沒有添加，建議盡快吃完。</li>
