<p class="wp-block-paragraph">這個食譜蒸出的來的蘿蔔糕是無一說不好吃的，更被稱讚是「超水準之糕」！好吃是當然的，用份十足的白蘿蔔和配料，不加一滴水，完完全是白蘿蔔的汁水來的開粉漿，原汁原味，味道純正。不是我稱讚自己，主要是冬天的白蘿蔔品質佳，成品自然好吃。</p>

<p class="wp-block-paragraph">蘿蔔糕好吃的秘密在於，用新鮮白蘿蔔汁開粉漿，不用水，不用水煮蘿蔔，用炒的方式炒出水份，不會稀釋蘿蔔原來的味道。豬油油蔥酥炒料帶來關鍵香氣，是蘿蔔糕美味的重要原因之一。細節也很重要，只要用心蒸製就會好吃。從選料開始，品質就已經決定了。</p>

<li>把配料切細碎，蒸好的蘿蔔糕更綿軟可口重難日木日</li>



<li>臘腸和臘肉已有調味，所以不用太多的調味，味道傾向簡單。如喜重口味一點，可以加白胡椒粉或蘸點醬油吃。</li>



<li>把蘿蔔炒軟、炒出水，不用加水煮蘿蔔，成品會更有蘿蔔天然的甜味。</li>



<li>倒入模具後要震幾下，以震出空氣及平整糕面。</li>



<li>糕面上的配料，入蒸前要用輕壓一下，蒸好才不會掉落。</li>



<li>挑選蘿蔔要選重的，代表多水，如皮薄透明，代表幼嫩。</li>



<li>一般是 兩斤（1200克）蘿蔔 4斤粉，但我用了2倍的蘿蔔，用量特別多，一半用來搾汁開粉漿。</li>



<li>白蘿蔔比較特別，不知道含水量，所以煮蘿蔔時要密切注意，以防煮焦了。炒蘿蔔條的時間也因應水份的多少而不同。</li>
