<p>培養天然酵母大約需要5～7天時間。每天觀察變化，也是一種樂趣，最後的結果更讓人振奮無比。為了吃到香氣十足、滋味豐富的麵包，我是試了很多種麵粉，覺得全麥麵粉香氣最濃郁（前提是日常容易買的麵粉）。</p>



<p><strong>有了這天然酵母，便很少再使用商業酵母了。</strong>尤其迷戀獨特的風味，最喜歡用來做酸種麵包和手工饅頭，無論是口感、香氣或耐放度都是用商業酵母無法媲美的。試過了，就知道， 一試便無法回頭。大氣孔的麵包，或者帶複雜的風味的麵包，<strong>你一定會願意花點小時間養一瓶自己的天然酵母。</strong></p>

<p>我很愛吃麵包，尤是硬硬的麵包，但是就怕一吃血糖馬上升高，畢竟都是碳水化合物，又怕發胖，又怕吃完就餓。所以，用天然酵母做的麵包，長時間發酵，不會如一般麵包快速影響血糖，也是努力餵養的首要原因。</p>

<p>既然生活上都離不開碳水化合物——美味的麵包、手工饅頭等等，那我就努力讓這些美味的食物變得更健康、美味加倍。尤其，年紀愈長愈注重健康、愈注重食材的，不妨多花一點時間去準備一日之食。</p>



<p>為了健康，也為了吃得好，花時間餵養和使用天然酵母，我很願意。</p>

<h2 class="wp-block-heading">準備什麼</h2>



<p><br><strong>麵粉</strong><br> 一般用全麥或高筋麵粉。不同的麵粉會有不同效果和風味，<strong>我建議用全麥麵粉</strong>，沒有經過去皮原粒磨粉，比一般麵粉含有更多纖維、礦物質和維他命，營養豐富且<strong>香氣十分濃郁</strong>。另外，可選擇有機、無漂白的麵粉，我多用日本高筋麵粉，效果不錯，在烘焙店也能買到。</p>

<p><br><strong>高温消毒過、有蓋的玻璃瓶</strong>。酵母需要氧氣才會迅速繁殖，所以不要密封玻璃瓶，瓶子不用太大，大約是材料的3倍左右。</p>



<p>起種非常簡單，大約需要5～7天，讓野母稳定下來就可以使用。起種是時間長，但沒有難處，只要每天定時（最好）丟棄、拌入新材料就可以，只需五分鐘左右的時間就可以。</p>

<p>起種的變化會因所用的麵粉、水、温度和濕度等有所出入，以上是我的一個起種紀錄，起種的條件各人不同，效果也不一，無法詳述，僅提供一個大概供參考。</p>



<p>溫度非常影響天然酵母的活躍度，溫度高酵母繁殖就愈快，所以要調節餵食的次數，如一天兩次。</p>



<p>溫度和麵粉十分影響天然酵母的起種過程，起種方法一樣，進度可能有異，請不要灰心，繼續養就是。</p>

<h2 class="wp-block-heading">如何判斷天然酵母是否活躍？</h2>



<p>可以用浮水測試。發酵力活躍的天然酵母會充滿空氣，十分蓬鬆、輕盈，可以飄浮在水起來。</p>
