<p>雲朵蛋糕材料簡單，基本是3樣材料：蛋白、糖及玉米粉，白醋既可以穩定蛋白，也可以減低蛋腥味，另外的香草精（雲呢嗱香油）也是增加風味及減低蛋腥味。</p>

<li>蛋白必須打至乾性發泡，蛋白勾挺立而短，可以避免烤好的蛋糕扁塌。</li>



<li>雲朵蛋糕要保持蓬鬆、綿軟是依賴蛋白支撐和少許糖、玉米粉輔助，尤其是蛋白必須打發得穩定。</li>



<li>糖的份量不可以減少，可以穩定蛋白。用糖粉會更佳（家裏就不講究了）。</li>



<li>玉米粉份量亦不宜增加，否則加重「雲朵」的負擔，質感就不對了。</li>



<li>趁熱享用，出爐後會一些消氣，但蛋白打發得穩定就可以避免整個塌了。</li>

<p><strong>以黑巧克力（95%）、黑加侖子啫喱、白蘭地三種風味為主軸，配上草莓🍓就讓我樂於獨享這份美味。</strong> 內有濕潤的蛋糕、濃郁黑巧克力夾層、QQ甜甜啫喱、入口即化的鮮奶油，外層還有脆脆的巧克力樹皮，口感十分豐富。尤其，散發出陣陣黑加侖子啫喱味，真是回憶啊。</p>

<p><strong>小時候，省下吃飯錢去麵包店買一塊黑森林蛋糕，那種興奮、那種滿足，可以保持一整天了</strong>。快樂很簡單，就是一塊蛋糕。 麵包店的黑森林不是用糖漬車厘子（櫻桃🍒）夾心，也沒有任何車厘子裝飾，反而是香港人很熟悉的<strong>黑加侖子味啫喱糖</strong>，也是我最喜歡吃的口道。</p>

<p>為了吃到<strong>綿軟的濕潤的蛋糕</strong>，還是決定用水浴法來烤，但用來做蛋糕層支撐性較不佳，比較適合直接吃，但組合起來口感超讚的！不用擔心手殘，貼上樹皮後，什麼都看不到，都會很漂亮的。</p>

<p>巧克力樹皮硬硬脆脆，豐富了蛋糕的口感，也可以起裝飾作用。貼上一塊塊樹皮，層次分明，更像老樹桩，灑上糖粉，更逼真了。<strong>這樹皮真的是畫龍點睛，也是揚長遮短！</strong></p>

<p>慕斯蛋糕的口感是最討喜的！ 好像在吃泡沫一樣，細緻濃厚的奶香，加上清香的藍莓，清爽不油膩，一口是不會滿足的。 </p>



<p>這次分享低碳、無糖、無麩質版的蛋糕，慕斯蛋糕運用了大量的鮮奶油、奶油乳酪，尤其適合進行<strong>生酮</strong>者，或者<strong>低碳飲食</strong>者。 </p>



<p>可以完全不用烤箱，做出一個漂亮的蛋糕。</p>
