<p>夏天天時暑熱，又濕又翳焗，最宜以時令瓜果煲湯，尤其是冬瓜袪濕湯。冬瓜是最佳的消暑食療，其味甘性寒，有清熱解暑、祛濕利尿、清心除煩和生津止渴等作用。尤其是大暑前後，藥房和海味鋪都有售冬瓜湯料包，內容大同小異，都同有消暑、清熱、利尿和健脾等功效。要煲冬瓜湯真的很容易、簡單。無論大暑還是小暑，只要是夏天，我家都得喜歡煲冬瓜祛濕湯，有時材料會簡化一些，但在大暑當日一定會「樣樣齊」煲湯。</p>

<p>很喜歡煲湯，也很喜歡喝湯。煲湯對我而言，是一種很放鬆的時間，也是自己的時間。尤其是很忙碌的時候，特別想「啖湯」，在那個時候如果有湯喝，真的是一種幸福！除了消暑、養生，也慰藉了心靈上的情緒。</p>

<p><br>赤小豆和薏米是最佳的祛濕組合。赤小豆和薏仁都有利水除濕功效，可以去水腫、促進新特別是在春夏，濕氣重，很喜歡煲赤小豆薏米水當茶水喝。赤小豆常與大米一起煮飯、熬粥，所以又稱為「飯豆」。薏米有生熟之分，生薏米的利水滲濕能力較強，但偏涼。熟薏仁在利水滲濕方面的能力雖然比不上生薏米，但對脾胃相對温和，所以在應用上會生熟各半。</p>

<li>把蓮蓬、荷葉、燈芯草和木棉花用淸水浸泡15分鐘，再沖洗乾淨，清水浸泡。</li>



<li>豆類（熟意米除外）先浸泡、淘洗乾淨，再浸泡1小時左右。熟薏米只要用清水沖洗一下即可。</li>



<li>、茯苓、澤瀉和川太片先浸泡一下，再清洗、浸泡。</li>



<li>豬肉汆水備用。</li>



<li>冬瓜洗淨，留皮切成大塊，去籽備用。</li>



<li>把所有材料放入湯鍋中（冬瓜除外），加入3500克清水，大火煮開後轉小火煲1小時。</li>



<li>加入切成大塊的冬瓜，用小火煲30小時。</li>



<li>最後加適量鹽調味，即可享用。</li>

<li><strong>處理豬手：</strong>豬手解凍後，先用清水浸泡30分鐘。</li>



<li>冷水下鍋，加入蔥、薑片和米酒用小火煮開至微開（大約30分鐘），再開至大火把雜質煮出，煮約三分鐘。過冷水沖洗乾淨，濾乾備用。</li>



<li><strong>用油炒糖色：</strong>冷鍋下油、冰糖（敲碎），小火炒，炒至冒泡泡、湧起泡沬、轉小泡後，加入熱水混合均勻成焦糖水備用（加水時小心）。</li>



<li><strong>微煎：</strong>冷鍋下油，把豬手稍煎。</li>



<li><strong>炆煮：</strong>加入焦糖水和調味料，大火煮開後，小火炆煮30分鐘。</li>



<li>攪動翻拌一下，關火燜1小時。</li>



<li>可以稍根據個人口味添加冰糖、鹽調整味道</li>



<li>大火煮開後，小火煮30分鐘即可享用。隔夜味道更好</li>

<li>處理豬手，必須冷水下鍋，小火可以，把雜質、血水及腥味逼出，再開大火進一步逼出雜質。這樣處理的肉類很雪白、乾淨。</li>



<li>糖炒過火了，會有些苦味。不炒糖也很美味，只是色澤甘沒有那些漂亮。</li>



<li>炒糖色可以能減少醬油的用量，尤其是老抽；並增添成品的風味，香甜不死鹹，更帶有淡淡的焦糖香；顏色則透亮、光澤。</li>

<p>記得第一次吃到馬鈴薯燉肉是在日本，一家很簡樸的小店，吃到非常簡單、直接的美味，讓我久久難以忘懷。回去之後，我便時不時燉一鍋來回味。</p>



<p>食材都很家常，<strong>葷素搭配</strong>，很營養，能滿足一家大小的需要。說到<strong>懶人料理</strong>，馬鈴薯燉肉最得我心。非常簡單、直接，可以把食材下鍋燉煮，非常簡便、快捷。也可以花些心思，細細處理，分階段把<strong>食材一一煎炒出香氣</strong>，再來燉煮，那滋味絕對更勝前者。</p>

<p>用來下飯，絕對能吃兩、三大碗。只吃小半碗的，都會吃到一碗，近年很少吃米飯。還是會特地煮米飯來吃這鍋，<strong>就是為了把粉糯的湯汁澆在米飯上，然後享受著一口菜一口飯的美味</strong>。裹上湯汁的米飯，真的很好吃，甜甜的，不會死咸，而且所有的精華都融合在那，超級無敵下飯！家有小孩的，<strong>一定要多煮一些米飯以備不時之需</strong>。</p>

<li><strong>豬肉</strong>：切成厚塊，或喜歡的大小，但有稍為有些厚度口感較佳。加兩湯匙的清酒、1茶匙糖醃豬肉，可以去味，也較嫩。我比較喜用五花肉，肥瘦相間，不會乾柴，有些油脂，燉出來的成品也油潤漂亮。</li>



<li><strong>馬鈴薯</strong>：去皮、切大塊，一開為四剛剛好。把去皮的<strong>馬鈴薯浸泡水</strong>，<strong>再削去邊角</strong>，還是泡水備用。<strong>浸泡水可以防止氧化和掉一些澱粉</strong>，燉煮的過程中不容易煮化。經過削去邊邊角角，<strong>也減去了脆弱的部分</strong>，這動作讓馬鈴薯<strong>經過燉煮後仍能保持原塊</strong>，沒有變很支離破碎、爛泥稀巴。</li>



<li><strong>紅蘿蔔</strong>：去皮、切大塊。</li>



<li><strong>洋蔥</strong>：去皮、切大塊。</li>



<li><strong>四季豆</strong>：摘去頭尾，對半切斷。</li>



<li><strong>蔥</strong>：切成蔥花。</li>



<li><strong>蒟蒻絲</strong>：隔去水份，水開後煮2～3分鐘，過水濾乾備用。</li>

<li>加入處理過的蒟蒻絲拌炒；</li>

<li>再加入調味及適量清水燉煮15分鐘至馬鈴薯變軟；</li>



<li>加入四季豆煮至斷生；</li>



<li>連鍋端上桌，可以享用了。</li>

<p>客家名菜——芋頭扣肉，用到了芋頭、豬肉，都是客家人飯桌上常出現的食材。適逢大時大節，尤其是過年的時候就會一大家子就會架鍋準備這道年菜，或者紅白二事的宴席上必定出現這道菜。記憶中，裝滿芋頭扣肉的大碗公一個一個整整齊齊地排在大灶，通常一蒸就是一下午，原鍋放在到明天，上桌前再蒸熱。那滋味到現在還記憶猶新：五花肉肥而不膩，芋頭咸香、粉糯…… </p>

<p>現在紅白二事都選擇去酒樓各酒店請桌，要吃只能自己動手做了！ 每家都有自己的秘方，但是一定少不了用腐乳、醬油及米酒調。我分享了我家、家鄉的味道。</p>

<li>蒜泥 3湯匙 </li>

<li>糖 1湯匙（我用了一顆冰糖／20克）</li>



<li>米酒 1湯匙</li>



<li>老抽 1湯匙（上色）</li>
