<p>我很少蒸芋頭糕，因為講究材料，材料決定了成品的好壞，<strong>不是你的廚藝不好，是原材料誤事</strong>，讓你白費了一埸心思，蒸出來的芋頭糕平平無奇。用了極多芋頭和餡料，手切芋頭絲，自己打米漿，無論原料或做法都費時、費工夫，但口感和香味是無敵的，是市售的無法相比的。</p>

<p><strong>有些糕不是年年蒸，也不是年年吃的，需要天時地利人和才能成事。</strong>為了吃上一個好糕，我會等待。年前竟然得到了一塊大芋頭（砲彈芋頭），一定不能浪費了這塊好料，立馬決定用來蒸芋頭糕，準備蒸糕過年，也滿足自己的慾。</p>

<p><strong>客家芋頭糕配料上偏鹹又濃味，材料沒有廣式芋頭糕來的花巧，但製作過程傾盡心力，令人回味無窮。</strong>成品的品質與色澤常受芋頭品種而影響，故製作時要選對好的芋頭品種，質地鬆軟的最好，台灣的檳榔芋和廣西荔浦芋非常粉糯，很適合用來蒸芋頭糕。至於芋頭是否用心刨絲或切丁，並沒有一定，自己方便處理最重要。</p>

<p><strong>芋頭糕煎來吃是傳統吃法</strong>，若要配沾料吃，簡單就好，因為已經很夠味了。如怕上火，蒸熱吃很好，煮湯料也很好吃。<strong>此食譜蒸出來的糕，很好煎，可以煎得面面焦黃，酥酥脆脆。</strong>冰箱冷藏後也不會硬蹦蹦，還是很柔軟，富有彈性。可以想像得到，一口咬下去外酥內軟，鹹香濃郁，一點都不會膩。（嘩～不自覺地吞口水喔。）</p>

<li>不同厚度的糕，以及使用的模具、蒸具等蒸煮時間有所不同，要按情況調整。</li>



<li>檢查是否已蒸熟，可用筷子插入其中，筷子上若無白色的生漿表示已經熟了。</li>



<li>白胡椒粉不建議少放，鹽可以添加到20克，味道更鹹香。這是地地道道的客家味。</li>



<li>炒餡料時，香菇先炒香再和其他材料一起炒，鍋邊灒酒會讓餡料炒得更香。</li>



<li>芋頭很硬，很難切，先對半切開再切成薄片，就很容易切成細絲。</li>



<li>白米和糯米粉的用量不大，芋頭和米漿煮成團後，放入模具要壓緊實，蒸出來才不會鬆散。用飯勺就很好用，不沾不黏。</li>

<p>「濠上獨游時，妙契莊生旨，我心素已愉，輕鰷樂如此」。 金魚是兒時過年的回憶。猶記得身姿奇異，色彩絢麗，花色似錦…… 是年味的一種。特胖的、特紅的，最是好看，尤其愛那兩隻大大的金魚眼。</p>

<p>不知何時開始，逛年宵時，必會去金魚攤撈幾條胖胖的金魚回去養，與金魚結下不解之緣……看著肥肥的魚擺動尾巴 游呀游呀，心情特別的好！年歲漸長，就不喜歡那紅得鮮艷的金魚，反而養起了小魚毛。 </p>



<p>金魚，又紅又胖，非常討喜，尤其正值春節時歡樂氣氛。金魚的「魚」與「餘」同音，因此，<strong>金魚</strong>就有<strong>金餘</strong>的寓意。 誰會不喜歡了！</p>

<p>新年時，蒸上一籠一籠的金魚餃就很應節，又有美好的寓意。是可以吃的金魚。鮮艷肥美的金魚外形是賣點，內餡包喜歡的就好了，個人喜歡芹菜豬肉餡，就是外皮與一般餃子的材料不同，處理手法上有出入。</p>



<p>工具，簡單的只需要一枝吸管、一根筷子及一把刀。</p>

<h2 class="wp-block-heading">小秘訣：</h2>



<p>澄麵、低筋麵粉的比例，完美還原金魚外貌。幾乎沒有筋性，塑型容易，與泥膠無異，可以搓圓按扁。用了澄麵，沒有筋性，熟後晶瑩通透，很像金魚鱗的樣子，再加上一些麵粉，就完美了。</p>



<p>先用滾燙的熱水把澄麵燙熟，攪成團後，揉入低筋麵粉，很容易就揉成光滑麵團。再揉和油，醒10分鐘。稍為揉開、揉軟才能好好地做造形。</p>



<p>包餡的外皮不能太薄，要有點厚度，蒸好的餃子最像金魚，胖嘟嘟的，金魚肚帶點微透。尾巴的部分就要透薄一些，才顯得輕盈多姿，擺起來才柔若輕紗。</p>

<p>顏色要一點一點調到金魚的顏色。紅色、橙色的用量都要一點一點地調，不同品牌的色素用量都不同，顏色差了，效果就差了一大截。太紅了，就過了，太橙了，也失真了。所以，要逼真，紅、橙色以外，可以有額外的顏色混合使用。</p>



<p>我就用了紅、橙兩色，重手了就變成了另一種色，不同的比例可以混出多種色調。<strong>顏色深淺按自己喜歡，没有一定的比例。</strong></p>

<p>蒸好後，一定要刷上一層薄薄的油，除了可以防沾，更是營造出魚鱗濕漉漉的外貌，閃閃爍爍的，外貌更神似。趁熱刷油才不會油光滿面。</p>



<p>餃子每一隻大小不一、肥瘦不同，才是金魚嘛。一隻餃子的白色麵團大約20克，斑點隨意，有顏色小麵團要大小不一、不平均分布，才像金魚身上的斑紋，有大有小更神似。內料包得多，鼓鼓的肚子最可愛了。</p>



<p>這麼可愛、漂亮的金魚很適合過年招待親朋好友，大展你的廚藝，還可以閃爆到他們的眼睛，光看到就捨不得吃了！與小孩一起包餃子也是很美好的親子時光，能看又能吃，也可以訓練動手的能力，一舉數得。</p>

<p>椰汁糕是我家過年幾乎都會買的年糕，以前。那時，椰汁糕是白色的，眾多賀年糕點顯得平平無奇，但為我所好。小時候，逛超市遇上試吃有它，一定會試吃，品嘗味道、聞聞香氣及試試口感，通常都不會光顧的。不是椰子味太淡就是太甜，或者糕太硬了。</p>



<p> 有一年在日本、台灣帶回來了幾包黑糖，自此愛上了黑糖。其它的地方的暫時沒有找到喜歡的、可負擔的。尤其，嘗試用來蒸黑糖椰汁糕後，更是一試難忘，一直心心念念，總想買黑糖、椰漿再調整食譜、做法。</p>

<p><strong>最天然、簡單的材料及做法。</strong>鄉下的親戚都是用香蕉葉防沾、包裹年糕，正確應該叫「大粄」，老人家稱「<strong>蒸大粄</strong>」，用的紅糖及新磨的糯米粉攪成粉漿，倒在鋪滿蕉葉的大竹篩盤中。然後，放上大灶蒸上半天，直到明天再出鍋。這種大粄一直沿用傳統、簡單的做法。還有一種是把水和粉調成稍為濕的粉團，放入石樁舂，很像舂糍粑一樣，口感更佳。</p>

<p> 已很多年未吃到鄉下的年味。一是紅糖不純，二是水不同，三是非大灶蒸，四是缺香蕉葉，五是速食文化不會舂粉團。市售的糕當然是望而卻步。市售的太多是以利為先，以低成本為主，以及添加防腐劑等，往往欠缺了食物該有的味道、原味。</p>

<p> 臨近新年時，收到朋友採的新鮮蕉葉，很是開心，將珍藏著、很寶貝的黑糖拿出來蒸年糕（之前在台灣帶回來的）。<strong>好的原料才會有好的成品</strong>。沒有用手搓揉，也沒有接觸粉漿，只用了一支擀麵杖，就能做出口感極佳的糕，一樣可以達到煙韌的效果，最用這方法做出來的糕，非常有「咬口」。</p>

<p><strong>最喜歡或推薦的食法，就是放涼後吃</strong>，邊嚼邊撕掉香蕉葉，椰香味撲鼻、蕉葉清新夾著黑糖焦甜，「唔！」一口不夠，再來一口⋯⋯冬天直接放室温，兩三天也不會變硬，而且吃起的口感會變化，愈見札實，煙韌、軟糯變成彈牙。冷藏過，回蒸放涼，再吃也很好。下鍋煎也可，個人覺得破壞樸實的質感。</p>

<p>  第一次吃紅棗糕是在茶樓飲茶，點了一籠蒸的紅棗糕，未到桌已聞到紅棗的香甜，吃起來很煙韌、軟糯，那滋味久久不忘⋯⋯每上茶樓總會在點心紙上尋找它的身影。有幾年新年時，會收到表哥送的棗皇糕券，真的非常好吃！過年，我都在期待他送的棗皇糕。自他結婚後，家裏就再也沒收到了，該是女主人有新的安排吧。</p>



<p>  紅棗非常香甜，很可口，很容易接二連三地吃個不停，吃多了會上火，會口乾舌燥。記得有一次，買了一大包新彊大紅棗，真的很大顆，又香、又脆、又甜，吃著吃著就幾乎吃光光了。哪會知道，明天臉上就冒起幾顆大顆痘痘，又紅又腫，鼻子也快要噴火。後來，才知道不能一次吃太多，一天兩三顆點到即止，多了會上火、燥熱。</p>

<p>  有了那次的教訓，紅棗一不小心吃多了，必馬上喝碗涼茶下火。</p>



<p>  賀年食品，免不了油炸、油煎，蒸上幾個這紅棗糕送禮，絕對大方、得體，也得健康養生。明打著「健康養生」、「養顏美容」的名堂，有誰不喜歡！有哪一個會說不好吃？而且，無油、少糖，清爽得很，多吃幾塊也沒有心理負擔喔。</p>

<li>冷藏後的紅棗糕會稍硬身，吃起來爽口，顏色會發白、不通透。但再加熱後，會轉回晶瑩剔透，糕體回軟。&nbsp;</li>



<li>黑糖可以增香添味，少許就可以了。黑糖和紅棗的味道很搭配。</li>



<li>馬蹄粉，結晶體大。粉漿需要過濾兩三次，才會有細緻、順滑的粉漿。</li>



<li>紅棗糕蒸熱吃、放涼吃、冷藏吃各有不同口感、優點。個人最推薦夏天冷藏吃、秋冬蒸熱吃。油煎也是可以，只是較為油膩，看個人喜好。</li>
