<p>自己動手做真的起級簡單，沒有任何技術，只要有綠豆，一定可以吃到美味可口的綠豆涼粉，而且咸甜皆可，隨喜。我有喜歡的醬汁，也超級容易，可以用在各式各樣的涼拌菜，很萬用、美味。與綠豆涼粉搭配在一起，酸酸辣辣，絕佳！拌碟如有一些小黃瓜絲、蒜泥、炸碗豆、芫茜和白芝麻等就十分完美，口感豐富無比。</p>

<p>說到綠豆，廣東人通常是加糖煮成綠豆沙，用來作飯後甜品或消暑，以及消熱解毒、下火除口氣等。小時候，一到夏天家裏就很常煮一大鍋，讓小孩子消暑、下火。其實，綠豆有很多的吃法，綠豆糕、綠豆餅、綠豆涼粉和冬粉。​​有機會再分享更多的食譜。</p>

<li>綠豆要浸泡透，才容易打得細膩。我都會隔夜浸泡，夏天放冰箱保存。</li>



<li>浸泡綠豆最好放冰箱，可以防止發芽、發臭，尤其是夏天温度高。</li>



<li>綠豆攪拌得細膩，比較容易洗出澱粉，所以攪拌機可以打久一些。</li>



<li>綠豆澱粉是凝固成型的關鍵。要洗出、擠出澱粉，只有足夠的澱粉才可以成型，並不需要添加額外的澱粉凝固，純綠豆製作。</li>



<li>純綠豆澱粉凝固後，結實、Q彈，但吃起來的口感是偏軟，入口即化，不會爽口。</li>



<li>綠豆：水比例大約是1：2，比較不容易出現問題，不會水水的。</li>



<li>過濾袋準備大一些，方便搓洗綠豆澱粉。</li>

<p><strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-2-color">Chili Oil🌶 油潑辣子🌶 紅油 。</mark></strong></p>



<p>一匙辣椒油能起畫龍點睛之效。吃麵也好、拌飯或涼拌也好，都發揮添味，增香。一瓶放在桌上，喜歡就加點。可以沒有辣椒油，但總感覺少了些什麼🤔。 辣椒油可以很簡單，也可以做得很複雜。這次有點功夫，有點時間，但絕對值得！</p>
