<p>喜歡荔枝那股香甜，甜滋滋的，很好聞。嗅一嗅，聞一聞，垂涎三尺。但一粒荔枝三把火，也不敢吃太多。無法在短時間內消化荔枝山，總是用不同方式把那荔香保存起來，把它養在家裏，希望一年都能聞到誘人的果香，沉醉在甘甜中。浸酒應該是最簡單的，浸一瓶屬於自己的荔枝酒吧！一年一次，也是夏日的回憶。有小孩的，帶著孩子一起動手製作，一定是美好童年回憶——被一陣陣、淡淡的荔香縈繞。</p>

<p>荔枝殻說硬又不硬，如果用手剝就會黑指甲、傷手，剝幾顆還可。找到方法正確地剝荔枝，又快又輕鬆地剝殻，<strong>不傷手</strong>及<strong>不黑指甲</strong>，也<strong>完全不會碰到荔枝肉</strong>，剝荔枝就在一兩秒之間（熟手的就一秒），<strong>金蟬完美脫殻</strong>。荔枝殻上有一條凹槽， 是最脆弱的地方，雙手握住凹槽，輕輕夾捏就會爆開。爆開後只需一擠，就能快速離殻取肉，不會滿手汁水，黏糊糊的。<strong>一捏一擠兩個動作</strong>一氣呵成。</p>

<p>取肉不易，果肉不是五勞七傷就是五馬分屍，直接吃進肚子當然無所謂，用來浸酒其實也無所謂。但<strong>我有所謂！我有要求<strong>！</strong>我要完美取出一顆完完整整的！</strong>荔枝肉珠圓玉白，自帶光澤，似珠似玉，多漂亮！浸泡在玻璃瓶就是一道風景。取肉很簡單，準備一把小尖刀，用刀尖刺入荔枝蒂，沿著核邊轉一圈，肉核就會分離，核就可以輕鬆取出。工多藝熟，定會熟能生巧。</p>

<p>所有材料入瓶後密封，放在陽光照不到的陰涼處，三個月就可以收成，<strong>如有耐性不妨等半年以上再開封</strong>，酒味更成熟圓厚。如開封了，荔枝肉就要濾出，以稳定酒質。<mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color"><strong>酒愈陳愈香</strong></mark>。很多時，酒浸著浸著就忘了，想起時，已經是成熟迷人，香氣四溢的⋯⋯那時，的確要來一杯美酒！</p>

<p>任何荔枝都可以。選擇一些味道香甜多汁的或自己喜歡的，我這次用了「桂味荔枝」，喜其微酸清香，在表姐家摘的。淡紅帶綠，亦稱為「鴨頭綠」，以帶有桂花的清香而聞名，核小而<strong>果肉爽脆，味道清甜</strong>，剝殼時不會果汁四濺。</p>

<h2 class="wp-block-heading">❛ 酌量用糖 ❜</h2>



<p>糖的用量我只是<strong>隨意</strong>，建議用<strong>冰糖，純度高、味道清</strong>。荔枝味甜，糖的用量可以按喜好逐量減少。用砂糖不是不可以，只是很像喝糖水。</p>

<h2 class="wp-block-heading">❛ 平易選酒</h2>



<p>以<strong>無色、無特殊氣味</strong>的蒸餾白酒為基酒，如清酒、琴酒、高梁及雙蒸等等，就是自己喜歡的酒。建議用酒精濃度35%以上，較容易引出水果的果香，也能防止浸泡過程中水果腐爛。浸酒的酒是輔助元素，<strong>不需用太貴的酒</strong>，荔枝的味道才是重點，所以我選用了桂味荔枝和雙蒸。</p>



<p><strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">荔枝殻不要扔了，用來煲水喝，下火的</mark></strong>，貪嘴吃多了也不怕。</p>

<p>每年，我都很期待梅子上市、浸梅酒，為末來的一年作準備。浸梅子酒真的沒有對或錯的做法，都是家庭製作，各有方法和口味。了解基本的過程、步驟就可以動手浸出自己家口味的「梅子酒」。</p>



<p>我每一次打開梅酒都會很期待、驚喜。經過長時間等待，會急不及待想品嚐梅子酒的變化，很希望品出新的味道，不一樣的感覺。畢竟，時間會讓人變化，酒也是，以不同的心情去品，滋味更是盡在不言中。</p>



<h2 class="wp-block-heading">何浸梅子酒？</h2>



<p>非常簡單，只有3種材料，按喜歡的比例就能製作。更簡單地說，就是把梅子放進酒裏浸泡，為了中和梅子的酸度就加點糖中和一下。</p>



<p><strong>材料</strong></p>

<li>基酒（糯米酒/高梁酒/清酒/威士忌）</li>



<li>糖（冰糖/黑糖）</li>
</ul>



<p>一般用青梅、有點變黃的梅子，摸起是硬的， 不是軟的。太熟的梅子不適合用來浸梅子酒。</p>



<p><strong>比例</strong></p>



<p><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color"><strong>果香</strong>   </mark>青梅：白酒：糖＝3：2：1</p>



<p><strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">清香</mark></strong>   青梅：白酒：糖＝2：2：1 </p>



<p><strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">香甜</mark></strong>   青梅：白酒：糖＝1：1：1</p>



<p>我都根據梅子的熟度，搭配不同的糖、基酒，產地、品牌、甜度、酒精濃度也是我會考慮的因素，因此每一年都有不同的梅子酒，也是很期待的原因之一。</p>

<p>比例按個人喜好搭配，總有意想不到的味道。是浸泡，不是釀酒，沒有固定比例，也不會失敗的。如第一次浸泡，可以選擇冰糖和糯米酒，慢慢再根據口味調整。</p>



<h2 class="wp-block-heading">梅子酒做法 </h2>

<p><strong>step 6. 戳洞</strong></p>

<h2 class="wp-block-heading">浸泡時間</h2>



<p>一般而言，放在陰涼的地方三個月就可以喝了。根據多年的經驗，梅子與基酒的融合是需要時間，至少半年以上再開封味道會更好。我都是一年接一年地製作，浸泡時間長達一年，以源源不絕地滿足自己獨酌或招待客人。更會特意留下一些浸泡更長的時間。酒是愈陳愈香愈有意思。</p>

<p>我最喜歡的喝就是加冰塊，偶而加一、兩片薄荷葉添香。<strong>梅子酒加冰塊需要混合均勻</strong>，我都用調酒器搖均勻，冰塊與梅子的碰撞，挑起了沉澱已久的韻味、釋放了梅子的清新，得到一杯香氣十足的梅子酒。梅酒的味道會隨著冰塊慢慢地融起了變化，愈喝愈清淡。</p>
