<p><strong>米和水的<strong>黃金比例</strong>是1：1，<strong><strong>適</strong>合</strong>大部分的米</strong>。每個人喜歡的米飯口感，以及米的吸水性都略有不同，需要因應喜好、米種和食材的水份調整水的用量。這次用珍珠米，米和水的比例為1：0.9左右。煮米飯，無論用什磨鍋具，煮之前都稍為浸泡一下，米會煮得更透。只要多煮幾次，就可以煮出喜歡的炊飯。</p>

<p><strong>這鍋飯吃得真香！除了眼前的飯香，遇有回憶中的飯香</strong>。小時候，母親忙著準備過年，沒時間煮飯，就炆一鍋碗豆飯打發。對於小孩而言　簡直是天上的美味！特好吃，特能吃，吃了一碗又一碗，小小的身板可以吃上三碗，還會與弟弟比賽，看誰吃得多。阿公笑咪咪地看著我姐弟倆，飯也不知不覺吃多了。這飯真香！</p>

<li>醬汁可以先備好或趁煮飯空檔準備。醬油、米酒、麻油、糖混合均勻備用。</li>



<li>米洗淨，稍瀝水份後，放入鑄鐵鍋，加入清水浸泡。</li>



<li>蒜苗、芹菜也切細，臘肉、紅蘿蔔切丁備用。</li>



<li>在米中倒入米酒，鋪上臘肉，再鋪上碗豆，加入紅蘿蔔，用中火煮至水開。</li>



<li>水開後，轉小火蓋鍋蓋煮15分鐘。</li>



<li>時間到後，關火不開鍋，燜15分鐘。</li>



<li>時間到後，淋上醬汁，加入蒜苗、芹菜，最後燜5分鐘。</li>

<li>半肥半瘦的臘肉比較好切，太瘦會硬崩崩，很難切細，可先蒸軟再下刀。</li>

<h2 class="wp-block-heading">⫸  <strong>什麼是壽喜燒</strong>  </h2>



<p>壽喜燒是一種日式火鍋，又稱為鋤燒（日语：<strong>鋤焼き／すきやき&nbsp;<sup>Sukiyaki</sup></strong>），是一道<strong>備受喜愛的日本傳統的料理之一</strong>。食材一般是牛肉、豚肉、大蔥、豆腐、蒟蒻絲和蔬菜等等，再配合醬油、糖、味醂等混合而成的靈魂調醬汁一起烹煮的料理。在日本喜歡配合米飯一起食用，一道十分適合在冬天多人一起享用的家常料理。</p>



<p>若遇到值得慶祝的事時，通常會吃「壽喜燒」，食材更會出現高級牛肉。壽喜燒很適合年末與家人、親朋好友團聚。圍著坐，吃著壽喜燒，喝點小酒，聊著往事。</p>

<h2 class="wp-block-heading">⫸  道地日式壽喜燒  </h2>



<p>道地的壽喜燒，常用導熱及保溫性強的圓形厚底淺鍋（鑄鐵鍋），食用時不加水，僅透過洋蔥、蔬菜及豆腐等天然食材釋放出的水份，與其它食材慢火熬煮。因地域差異，壽喜燒分可分為「關東」和「關西」兩種不同風味的做法。</p>

<p>兩者相同之處，食用時都沾生雞蛋液。其實，餐廳和家庭都有不同的做法，也很難一概而論。</p>

<li>材料清洗備用。</li>



<li>切成方便吃的大小，如南瓜切厚片、香菇切十字花。</li>



<li>熱鍋：鍋裡放入一塊奶油煮化，加入牛肉片稍微至8成熟，夾起牛肉。</li>



<li>加入洋蔥或大蔥，並加入砂糖一起炒焦，再加入醬汁煮開。</li>



<li>加入一些較耐煮食材，如南瓜、芋頭、蒟蒻絲和紅蘿蔔等。</li>



<li>陸逐加入蔬菜，如大白菜和茼蒿等等。</li>



<li>最後將把煎過的牛肉放入，蓋上鍋蓋加熱，煮熟就可以吃了。</li>

<p>記得第一次吃到馬鈴薯燉肉是在日本，一家很簡樸的小店，吃到非常簡單、直接的美味，讓我久久難以忘懷。回去之後，我便時不時燉一鍋來回味。</p>



<p>食材都很家常，<strong>葷素搭配</strong>，很營養，能滿足一家大小的需要。說到<strong>懶人料理</strong>，馬鈴薯燉肉最得我心。非常簡單、直接，可以把食材下鍋燉煮，非常簡便、快捷。也可以花些心思，細細處理，分階段把<strong>食材一一煎炒出香氣</strong>，再來燉煮，那滋味絕對更勝前者。</p>

<p>用來下飯，絕對能吃兩、三大碗。只吃小半碗的，都會吃到一碗，近年很少吃米飯。還是會特地煮米飯來吃這鍋，<strong>就是為了把粉糯的湯汁澆在米飯上，然後享受著一口菜一口飯的美味</strong>。裹上湯汁的米飯，真的很好吃，甜甜的，不會死咸，而且所有的精華都融合在那，超級無敵下飯！家有小孩的，<strong>一定要多煮一些米飯以備不時之需</strong>。</p>

<li><strong>豬肉</strong>：切成厚塊，或喜歡的大小，但有稍為有些厚度口感較佳。加兩湯匙的清酒、1茶匙糖醃豬肉，可以去味，也較嫩。我比較喜用五花肉，肥瘦相間，不會乾柴，有些油脂，燉出來的成品也油潤漂亮。</li>



<li><strong>馬鈴薯</strong>：去皮、切大塊，一開為四剛剛好。把去皮的<strong>馬鈴薯浸泡水</strong>，<strong>再削去邊角</strong>，還是泡水備用。<strong>浸泡水可以防止氧化和掉一些澱粉</strong>，燉煮的過程中不容易煮化。經過削去邊邊角角，<strong>也減去了脆弱的部分</strong>，這動作讓馬鈴薯<strong>經過燉煮後仍能保持原塊</strong>，沒有變很支離破碎、爛泥稀巴。</li>



<li><strong>紅蘿蔔</strong>：去皮、切大塊。</li>



<li><strong>洋蔥</strong>：去皮、切大塊。</li>



<li><strong>四季豆</strong>：摘去頭尾，對半切斷。</li>



<li><strong>蔥</strong>：切成蔥花。</li>



<li><strong>蒟蒻絲</strong>：隔去水份，水開後煮2～3分鐘，過水濾乾備用。</li>
