<p>看起來就是樸實無華的吐司，聞起來卻是藏不住的香味，散發低調又張揚的荔枝香！真的超極香的，吃過了絕對無去回頭。按下去，極富彈性，吃起來細膩、柔軟。撕開的手感，很好！用手輕輕撕開，可以拉出細絲。建議不要抹醬直接單吃，香噴噴的，吃那種微微的酸，淡淡的荔香，吃過了就會發現它的美好！</p>

<p>沒有廚司機，夏天也能手揉吐司，不用量温度、不用揉出薄膜，手揉就可以揉出非常之柔軟的吐司。加上以荔枝起種的天然酵母，帶有獨有的荔香，風味十足，尤其是出爐那刻，散發出的香氣，讓人貪婪地深深吸納，深怕氣味悄悄漏走了。</p>

<p><strong>荔枝原種用了隔夜中種法：</strong>把活躍的荔枝原種放入冰箱冷藏進行隔夜發酵，12~24小時後再與主麵團混和，整型、發酵與烘烤。這種做法讓麵包口感細緻，成品保濕性強，在室溫放兩到三天依然蓬鬆、柔軟和可口。而且，長時間的發酵，大大加速了主麵團的發酵率。</p>

<li>把所有材料混均勻（奶油除外），放冰箱冷藏30分鐘。</li>



<li>用手揉開麵團，再加入奶油後手揉5～10分鐘至合均勻，再放冰箱冷藏30分鐘。</li>



<li>移到桌上手揉麵團25～20分鐘。揉麵團手法請看影片。</li>



<li>收圓後室温發2小時左右，約發至1.5倍大。</li>



<li>移到桌上，排氣、擀開，分成三等份滾圓，靜置10分鐘。</li>



<li>擀成牛舌狀，翻面捲起成長條，再擀一次，捲成圓卷。三卷都排入已塗抹奶油的模具，發酵至8～9分滿。</li>



<li>放入已180<em>℃</em>預熱的烤箱，烤30分鐘。</li>



<li>出爐後，馬上敲一下讓熱氣排出，脫模，放涼即可享用。</li>

<li>要用冰水。水的用量因應麵團而調整。</li>



<li>奶油要用時才從冰箱取出。</li>

<p>我使用了<strong>大量的豆渣</strong>，蒸好的饅頭十分Q軟，豆香濃郁，風味獨特，<strong>膳食纖維也很高</strong>。豆渣能提供<strong>豐富的膳食纖維</strong>，而且<strong>熱量非常低</strong>，增加飽肚感之餘，也有助促進腸道健康，防治便秘，收排毒美顏之效。還有降脂、降糖和減重等作用。</p>

<p>使用豆渣的取代了大約40%的麵粉，<strong>降低碳水，更高纖維，更高蛋白質</strong>，所以<strong>不怕吃饅頭發胖</strong>。減少麵粉攝取，少了負擔，享受美食也沒有無罪惡感，也不必完全戒掉麵粉。</p>

<p>我用了<strong>自養的天然酵母</strong>（即酸種、老麵），饅頭的組織非常細緻，口感和香氣更為獨特，更有益腸道健康。要重要的是「升糖指數低」，<strong>不利脂肪積聚，不容易吃胖</strong>。而手工揉製，老麵發酵醞釀出深醇的麵香、Q彈紮實的麵皮，色澤微黃樸實，室温長放也不會乾硬。</p>

<p>5. 室温發酵到1.5倍大，大約2小時（溫度約30度C）。我直接於在蒸鍋內發酵。</p>



<p>6. 冷水上鍋，水煮開後計時，以中大火蒸約15分鐘，關火悶5分鐘即可。</p>

<ol class="wp-block-list">
<li>高筋麵粉的用量可按豆渣的含水量調整，逐量增加用量，以揉成不黏手的麵團。</li>



<li>麵團要揉的比較硬，水的用量依照狀況斟酌。</li>



<li>硬麵團，蒸出來的饅頭口感有嚼勁，嚼道十足；軟麵團，蒸出來的饅頭就鬆軟。</li>



<li>水可以用牛奶或豆漿代替。但用清水也很好。</li>



<li>添加少許鹽可以強化筋性，更有嚼勁，還帶輕微的咸味，豆香更濃。</li>



<li>糖主要是讓味道要豐富，只是微微甜，也有助發酵。不加是可以的。</li>



<li>蒸好的饅頭要移出蒸鍋放涼，避免倒汗水讓饅頭發脹。</li>

<p><strong>家庭麵包就是要以健康為大前題，不要添加劑</strong>，所以能自己做就自己做，吃得安心而健康。我會用手揉的方式處理麵團，這款小餐包也不需要很到位的揉麵，其實也只是揉10分鐘左右，不用很漂亮的薄膜。反正，也很漂亮和好吃。</p>

<li>將麵團延展開，把奶油均勻鋪上，再將麵團捲起。</li>



<li><strong>揉和</strong>麵團和奶油大約要3分鐘，把奶油充份揉入麵團。</li>



<li><strong>揉麵</strong>大約10分鐘。重覆把麵團延展後、對折，轉90度。</li>



<li><strong>甩麵</strong>幾下。</li>



<li>檢查麵團，可以拉出比較粗糙薄膜。</li>
