<p class="wp-block-paragraph">㊙麵團處理有技巧、心得｜<strong>不用手粉、不黏、不破皮</strong>｜<strong>皮薄餡滿</strong> Chinese Chive Pocket</p>



<p class="wp-block-paragraph">韭菜盒子非常家常，有韭菜就能包，各家各有做法，煎的、烙的、炸的都有，還聽過蒸的。要皮薄餡大，麵團處理是有一些小技巧，就<strong>很容易擀薄、不破皮</strong>，也完全不用手粉。我最喜歡干烙，最後再稍為油煎一下，<strong>外脆內軟</strong>，外皮咬下去「咔嚓！咔嚓！」，裏面卻是軟軟韭菜、彈牙的粉絲，滿嘴香。</p>



<p class="wp-block-paragraph">用沸水燙麵，麵粉分次混合，揉成不黏手的麵團。可以不用手粉，完全不黏手、案板，對於很怕處理麵團的人，很好上手及容易操作，成品也會漂亮。麵團的特點，不黏、延展性好，卻不會軟趴趴，很像泥膠。</p>



<p class="wp-block-paragraph">除了做成韭菜盒子，也可以用來包餃子，擀皮也是一樣的操作。如果你喜歡有點厚度的餃子皮。無論是水煮、煎餃都一樣好食。</p>



<p class="wp-block-paragraph"><strong>這食譜是家常、簡單及不易失敗的，麵團容易塑形，成品酥香。</strong></p>
