<p>椰汁糕是我家過年幾乎都會買的年糕，以前。那時，椰汁糕是白色的，眾多賀年糕點顯得平平無奇，但為我所好。小時候，逛超市遇上試吃有它，一定會試吃，品嘗味道、聞聞香氣及試試口感，通常都不會光顧的。不是椰子味太淡就是太甜，或者糕太硬了。</p>



<p> 有一年在日本、台灣帶回來了幾包黑糖，自此愛上了黑糖。其它的地方的暫時沒有找到喜歡的、可負擔的。尤其，嘗試用來蒸黑糖椰汁糕後，更是一試難忘，一直心心念念，總想買黑糖、椰漿再調整食譜、做法。</p>

<p><strong>最天然、簡單的材料及做法。</strong>鄉下的親戚都是用香蕉葉防沾、包裹年糕，正確應該叫「大粄」，老人家稱「<strong>蒸大粄</strong>」，用的紅糖及新磨的糯米粉攪成粉漿，倒在鋪滿蕉葉的大竹篩盤中。然後，放上大灶蒸上半天，直到明天再出鍋。這種大粄一直沿用傳統、簡單的做法。還有一種是把水和粉調成稍為濕的粉團，放入石樁舂，很像舂糍粑一樣，口感更佳。</p>

<p> 已很多年未吃到鄉下的年味。一是紅糖不純，二是水不同，三是非大灶蒸，四是缺香蕉葉，五是速食文化不會舂粉團。市售的糕當然是望而卻步。市售的太多是以利為先，以低成本為主，以及添加防腐劑等，往往欠缺了食物該有的味道、原味。</p>

<p> 臨近新年時，收到朋友採的新鮮蕉葉，很是開心，將珍藏著、很寶貝的黑糖拿出來蒸年糕（之前在台灣帶回來的）。<strong>好的原料才會有好的成品</strong>。沒有用手搓揉，也沒有接觸粉漿，只用了一支擀麵杖，就能做出口感極佳的糕，一樣可以達到煙韌的效果，最用這方法做出來的糕，非常有「咬口」。</p>

<p><strong>最喜歡或推薦的食法，就是放涼後吃</strong>，邊嚼邊撕掉香蕉葉，椰香味撲鼻、蕉葉清新夾著黑糖焦甜，「唔！」一口不夠，再來一口⋯⋯冬天直接放室温，兩三天也不會變硬，而且吃起的口感會變化，愈見札實，煙韌、軟糯變成彈牙。冷藏過，回蒸放涼，再吃也很好。下鍋煎也可，個人覺得破壞樸實的質感。</p>

<p>  第一次吃紅棗糕是在茶樓飲茶，點了一籠蒸的紅棗糕，未到桌已聞到紅棗的香甜，吃起來很煙韌、軟糯，那滋味久久不忘⋯⋯每上茶樓總會在點心紙上尋找它的身影。有幾年新年時，會收到表哥送的棗皇糕券，真的非常好吃！過年，我都在期待他送的棗皇糕。自他結婚後，家裏就再也沒收到了，該是女主人有新的安排吧。</p>



<p>  紅棗非常香甜，很可口，很容易接二連三地吃個不停，吃多了會上火，會口乾舌燥。記得有一次，買了一大包新彊大紅棗，真的很大顆，又香、又脆、又甜，吃著吃著就幾乎吃光光了。哪會知道，明天臉上就冒起幾顆大顆痘痘，又紅又腫，鼻子也快要噴火。後來，才知道不能一次吃太多，一天兩三顆點到即止，多了會上火、燥熱。</p>

<p>  有了那次的教訓，紅棗一不小心吃多了，必馬上喝碗涼茶下火。</p>



<p>  賀年食品，免不了油炸、油煎，蒸上幾個這紅棗糕送禮，絕對大方、得體，也得健康養生。明打著「健康養生」、「養顏美容」的名堂，有誰不喜歡！有哪一個會說不好吃？而且，無油、少糖，清爽得很，多吃幾塊也沒有心理負擔喔。</p>

<li>冷藏後的紅棗糕會稍硬身，吃起來爽口，顏色會發白、不通透。但再加熱後，會轉回晶瑩剔透，糕體回軟。&nbsp;</li>



<li>黑糖可以增香添味，少許就可以了。黑糖和紅棗的味道很搭配。</li>



<li>馬蹄粉，結晶體大。粉漿需要過濾兩三次，才會有細緻、順滑的粉漿。</li>



<li>紅棗糕蒸熱吃、放涼吃、冷藏吃各有不同口感、優點。個人最推薦夏天冷藏吃、秋冬蒸熱吃。油煎也是可以，只是較為油膩，看個人喜好。</li>

<p><strong>從牛奶開始，只要室温發酵，不需要任何機器、零技巧</strong>。 材料、工具非常簡單，在家就能養出源源不絕好菌酸奶/乳酪/優格。 希臘乳酪也可以喔！</p>



<h2 class="wp-block-heading">⎯ 自製乳酪的原理 ⎯</h2>



<p>沒有什麼原理，就是讓牛奶發酵而已！<strong>夏天的溫度最有利發酵</strong>，冬天温度低，放在温暖的地方增加温度，比如爐台旁或放入保温箱。 温度低時，我會放入烤箱，再放入一杯熱水，保持温暖，有利發酵。</p>



<p>經驗告知，用全脂牛奶會較濃稠。無論是新鮮牛奶、保久鮮都可以成功。</p>

<h2 class="wp-block-heading">⎯ 為什麼自己做乳酪 ⎯</h2>



<p><strong>味道、口感及營養都比一般乳酪佳。</strong>市售乳酪真的很貴，自己做成本只有售賣的1/5或者1/10，而且全天然、無添加，也没有什麼增稠劑。</p>



<p>自己做希臘乳酪就更棒了（很簡單的，跟著影片就可以了）。<strong>買到的通常是「希臘式乳酪」Greek Style Yogurt/Greek Recipe 不是「希臘乳酪」。</strong> 買食物我會看食物標纖或成份及一些非常小的文字，不看不會發現「掛羊頭賣狗肉」的產品，大標題寫著「<strong>Greek  Yogurt</strong>」，內文是寫「<strong>Greek Style Yogurt</strong>」，都在同一包裝上。這樣也是可以！<strong>這是騙消費者嗎？</strong>我只能相信，我也無法進一步查證。這也不是我的工作，不買就是。</p>



<p>在進生行生酮、低碳飲食時，用來做甜點都非常好。 </p>



<h2 class="wp-block-heading">⎯ 希臘式乳酪和希臘乳酪的差別 ⎯</h2>



<p>🌿<strong>「希臘式乳酪」</strong>與一般乳酪無異，只是加入了乳蛋白和增稠劑如改性粟米粉、改性澱粉質和明膠等，來營造出如希臘乳酪般稠口感。</p>



<p></p>



<p> 🌿<strong>「希臘乳酪」</strong>篩去水份及乳清，因此乳含量會較少，適合一些乳糖不耐症或關注糖尿病人士食用。希臘乳酪能提高飽足感，從而控制食量，適合減肥/生酮飲食人士。 又名脫乳清優格/優格起司。</p>

<p>清明前後，雨水充足，雞屎藤（又稱雞矢藤、雞香藤）長得極好，尤多新枝嫩葉，香港的客家人會用來做茶果，用來拜祭、供奉祖先。臨近清明，故又稱為「清明仔」。</p>



<p>雞屎藤的葉子被揉碎之後，就會散發出一種雞屎的臭味，雞屎藤的名字也由此而來。但是，做成茶果後有清香的氣味。<strong>客家人很有智慧，把草藥做成吃食，除了果腹、便攜、利存，還有藥用價值，強身健體。</strong></p>



<p>小小一顆圓球，以甜吃為主，只下片糖，食口感、草香、藥用價值，包了餡料反而畫蛇添足。簡而美。當然，你可以包餡的。</p>



<p><strong>老人家的茶果都是沒有食譜，只有大概的比例</strong>，相同的食材，在不同時節，會根據手感去調整用量。所以，每一次向他們討教，總是得到「差不多」、「大概」、「一點點」之類的話語，並非藏私，<strong>而是說不來的經驗才是真正的食譜</strong>。</p>



<p><strong>我的食譜雞屎藤用量較多（傳統做法），要做出好吃、有口感的茶果是需要「經驗」。</strong></p>

<p>每年，我都很期待梅子上市、浸梅酒，為末來的一年作準備。浸梅子酒真的沒有對或錯的做法，都是家庭製作，各有方法和口味。了解基本的過程、步驟就可以動手浸出自己家口味的「梅子酒」。</p>



<p>我每一次打開梅酒都會很期待、驚喜。經過長時間等待，會急不及待想品嚐梅子酒的變化，很希望品出新的味道，不一樣的感覺。畢竟，時間會讓人變化，酒也是，以不同的心情去品，滋味更是盡在不言中。</p>



<h2 class="wp-block-heading">何浸梅子酒？</h2>



<p>非常簡單，只有3種材料，按喜歡的比例就能製作。更簡單地說，就是把梅子放進酒裏浸泡，為了中和梅子的酸度就加點糖中和一下。</p>

<p>一般用青梅、有點變黃的梅子，摸起是硬的， 不是軟的。太熟的梅子不適合用來浸梅子酒。</p>



<p><strong>比例</strong></p>

<p><strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">香甜</mark></strong>   青梅：白酒：糖＝1：1：1</p>



<p>我都根據梅子的熟度，搭配不同的糖、基酒，產地、品牌、甜度、酒精濃度也是我會考慮的因素，因此每一年都有不同的梅子酒，也是很期待的原因之一。</p>

<p>比例按個人喜好搭配，總有意想不到的味道。是浸泡，不是釀酒，沒有固定比例，也不會失敗的。如第一次浸泡，可以選擇冰糖和糯米酒，慢慢再根據口味調整。</p>

<p><strong>step 1. 清洗</strong></p>

<h2 class="wp-block-heading">浸泡時間</h2>



<p>一般而言，放在陰涼的地方三個月就可以喝了。根據多年的經驗，梅子與基酒的融合是需要時間，至少半年以上再開封味道會更好。我都是一年接一年地製作，浸泡時間長達一年，以源源不絕地滿足自己獨酌或招待客人。更會特意留下一些浸泡更長的時間。酒是愈陳愈香愈有意思。</p>

<p>我最喜歡的喝就是加冰塊，偶而加一、兩片薄荷葉添香。<strong>梅子酒加冰塊需要混合均勻</strong>，我都用調酒器搖均勻，冰塊與梅子的碰撞，挑起了沉澱已久的韻味、釋放了梅子的清新，得到一杯香氣十足的梅子酒。梅酒的味道會隨著冰塊慢慢地融起了變化，愈喝愈清淡。</p>
