<p>「古早味粉漿蛋餅」不同一般早餐店的蛋餅（蛋餅皮＋蛋），粉漿蛋餅的餅皮卻是由粉漿做成的，口感也大不相同，我卻超級喜歡這種軟中帶Q的口感。想要蛋餅吃起來口感 QQ軟軟，粉漿不能只加麵粉，麵粉也一定要用中筋麵粉餅皮才會軟軟的、Q度剛好，既有實感也不會太輕柔（低筋、和高筋麵粉口感會不同），再加上些地瓜粉口感會軟中帶Q。</p>

<li>把中筋麵粉、地瓜粉、鹽、蔥花和水混合，攪拌均勻成粉漿，</li>



<li>熱鍋下少許的油倒入一半粉漿並攤平。</li>



<li>待餅皮變色和邊緣變硬後翻面。</li>



<li>翻面後的餅皮也煎一煎，移到盤子上。</li>



<li>原鍋抹上少許油，打入一雞蛋並弄散，煎至半熟。</li>



<li>把煎好的餅皮平鋪在半熟蛋上，煎至雞蛋變熟。</li>



<li>再一次翻面，放上喜歡的餡料，捲起蛋餅就完成。</li>



<li>切成小塊，上醬油膏，就可以享用。</li>

<li>將煎好的餅皮先起鍋，放在盤中備用，平底鍋不用熄火，準備煎蛋液</li>



<li>粉漿加入少許鹽，味道更好，也可以不用再配沾醬。</li>



<li>粉漿倒入鍋前，先攪一攪，因為粉漿會沉澱</li>



<li>粉漿攪拌至無<strong>粉</strong>粒即可，不用靜置可直接用。也可以前一天先將粉漿調好，放置冰箱冷藏，隔天早上就可以馬上用了。</li>



<li>煎完餅皮後，視乎鍋中油量而適當加油再煎蛋。</li>



<li>煎蛋煎至半熟後鋪上蛋餅皮，就樣餅皮和蛋就相黏起來。</li>



<li>捲蛋餅小心得，先捲三分之一，固定好位置，再一次呵成捲到底，就會很漂亮。</li>

<li>用中火/大火煎，速度快，但餅皮會起泡，表面就不平滑、美觀。</li>



<li>用小火慢煎，餅皮就是平滑、漂亮。</li>



<li>倒入粉漿並攤平，不用翻動，待餅皮變色、變硬。</li>



<li>粉漿白色等逐漸全部變成乳白色後，粉漿邊微微翹起和變硬，就可以翻面了。</li>
