<p class="wp-block-paragraph">雲朵蛋糕材料簡單，基本是3樣材料：蛋白、糖及玉米粉，白醋既可以穩定蛋白，也可以減低蛋腥味，另外的香草精（雲呢嗱香油）也是增加風味及減低蛋腥味。</p>

<li>蛋白必須打至乾性發泡，蛋白勾挺立而短，可以避免烤好的蛋糕扁塌。</li>



<li>雲朵蛋糕要保持蓬鬆、綿軟是依賴蛋白支撐和少許糖、玉米粉輔助，尤其是蛋白必須打發得穩定。</li>



<li>糖的份量不可以減少，可以穩定蛋白。用糖粉會更佳（家裏就不講究了）。</li>



<li>玉米粉份量亦不宜增加，否則加重「雲朵」的負擔，質感就不對了。</li>



<li>趁熱享用，出爐後會一些消氣，但蛋白打發得穩定就可以避免整個塌了。</li>
