<p class="wp-block-paragraph">這綠豆餡的做法，是我<strong>最常用的方式，也是最方便、快捷的，炒製時間前後大約10分鐘。</strong>這食譜沒有加粉類成型，依賴綠豆本身的澱粉和麥芽糖成團，口感尤其綿密柔軟。炒好的餡料，<strong>放在冰箱冷藏了7日也不會變得磞磞</strong>，只是失去了一些水份，變得比較乾，沒有之前的柔軟，只需要經過解凍和回炒就可以使用。</p>

<p class="wp-block-paragraph"><strong>綠豆餡很萬用，常用來製作中式糕點，</strong>特別是冰皮月餅或酥皮月餅。可以添加一些乾果，例如蔓越莓、葡葡乾和堅點，增添一些口感和風味。我最喜歡就是綠豆蔓越莓餡，吃起來，綿軟可口，微甜帶酸，甜而不膩，而自己製作就是以健康為上，油、糖不多的份量。</p>

<p class="wp-block-paragraph">餡料一般會預備多一些，多出的可以冷凍保存起來，待日後使用，<strong>只要用前解凍和炒軟就可以變回柔軟。</strong>可以用來包包子，也可以做麵包，還有薄餅等等。</p>

<p class="wp-block-paragraph">還有一點，我喜歡自己炒餡料，可以因應自己的喜好調味，也不添加一些多餘的添加物，吃得安心、放心。</p>



<p class="wp-block-paragraph">綠豆餡可以直接做成綠豆糕，這食譜是一譜兩用，可以變化竹。多出的餡料，用了50克的模具壓30克的綠豆糕，大小剛剛好，不會太厚。也很喜歡微甜的綠豆糕。中秋節，綠豆糕也很受歡迎的，可以清心、下火。</p>

<p class="wp-block-paragraph">當然也要健康、安全，不能添加有的沒有的，一些多餘的添加物，色素是少數可以接受的範圍，當然可以天然色素（手上沒有😂）。</p>

<p class="wp-block-paragraph"><strong>油皮和油酥是1：1 ，所以外皮極酥脆，幾乎是一碰就碎，咬了一口，桌上就掉滿了碎屑。</strong>而且，烤好之後，一圈一圈的層次，真的很美、很美⋯⋯</p>



<p class="wp-block-paragraph"><strong>麵團很柔軟</strong>，也不用手揉很久，只要經過鬆弛，<strong>就會很容易手揉出薄膜</strong>，也很好包製。自家製作不會困難的，而且很詳細地分享了需要注意的地方，以及一些小細節，一定可以製作出漂亮的梅花酥。</p>

<p class="wp-block-paragraph">至於綠豆蔓越莓餡，微甜帶酥，我真的起級喜歡。吃起來，綿軟可口，甜而不膩，而自己製作就是以健康為上，油、糖不多的用量。與酥皮搭配在一起，外酥內軟，沒有理由不喜歡的！</p>

<p class="wp-block-paragraph">酥點剛烤好的第一天最為香酥，之後會慢慢回軟，外皮也會變軟。所以，吃不完或沒有要馬上吃，放涼後我會放冷凍保存，要吃的時直接放烤箱烤熱即可（一般會用120°C烤我10～15分鐘。或者一星期內要吃，放密封盒於冰箱冷藏。</p>

<p class="wp-block-paragraph">1. 中筋麵粉、糖過篩；</p>



<p class="wp-block-paragraph">2. 加入無水奶油中混合均勻；</p>



<p class="wp-block-paragraph">3. 將冰水倒入，混合均勻，搓揉成為均勻、柔軟的麵團；</p>



<p class="wp-block-paragraph">4. 封上保鮮膜，置室温鬆弛30-40分鐘。</p>

<li><strong>無水奶油不要回溫到太軟</strong>（可以按壓即可），不然混合時會黏手，可以在使用時才從冰箱取出。</li>



<li>麵團鬆弛後，稍為搓揉麵團，不用太久、太用力，最後甩幾下，全程大約5-10分鐘，會拉出溧亮的薄膜。</li>



<li>油皮出油、太軟可以放冰箱冷藏，稍稍變硬再繼續處理。</li>

<li>按順序包製的排好、順序開酥。</li>



<li>推出梅花外型時，不要弄破表皮，輕推就好。</li>



<li>擀皮不要来回擀，很容易破酥。</li>



<li>油皮、油酥的軟硬要一致，方便操作。</li>



<li>如有需要，可以撒一些手粉，防止黏黐和破酥。</li>



<li>室温度26～28°C是最佳的操作温度（<strong>夏天要開冷氣</strong>）。</li>
