<p class="wp-block-paragraph">很喜歡早餐店的蛋餅，在家裏也會自己做，但欠缺了醬油膏就是不對味！用醬油就不是那個味道，也不是那種感覺，總是吃得不滿意，不是記憶中的滋味。<strong>醬油膏</strong>在台式料厘和小吃中扮演著重要的角色，可以讓食物變得更美味，那是醬油無法代替的。自從<strong>自製醬油，也自然產生了</strong>蒜蓉醬油膏，食物就<strong>對味</strong>了。</p>



<p class="wp-block-paragraph">醬油膏是更濃、更甜的醬油。因為比醬油濃稠，更容易依附在食物表面上而不被吸收，適合用作蘸醬。這非常適合許多台灣小吃，例如蛋餅、肉粽和米糕⋯⋯</p>

<p class="wp-block-paragraph">第一次接觸醬油膏，誤以為是蠔油，外型真的很像，但品嘗過就知道是兩種截然不同的醬料。醬油膏味道偏甜，比醬油少一點鹹度，加入澱粉和糖調製而成。醬油膏和蒜蓉醬都是經典的台式醬料 ，只要有<strong>醬油膏</strong>就能自製<strong>台式蒜蓉醬</strong>（蒜蓉醬油膏），當然<strong>醬油膏</strong>也能自製。這兩種蘸醬是很多台式小吃的靈魂，少了就不是那個味。</p>

<li><strong>地瓜粉</strong>的用量建議是10克～15克之間，10克是偏流動性，15克是濃稠而不易流動。</li>

<li>澱粉：糯米粉、米粉（粘米粉或來米粉）、太白粉、地瓜粉、蓮藕粉、馬蹄粉、葛根粉等。使用的澱粉也各有不同特性和差異，按照喜歡的濃稠度增減用量。</li>

<li>台式醬油膏、蒜蓉醬油膏口味都偏甜。</li>



<li>糖可以用冰糖，顏色更清透，用黑糖則深厚。</li>



<li>把醬油水煮開後，可以把火調到最小，再慢慢倒入地瓜粉水 ，材料會更容易混合均勻。</li>



<li>地瓜粉水倒入之前先攪拌一下，避免粉水分離，地瓜粉沉澱底部。</li>



<li>醬油可分成咸口和甘口，而各地/品牌都有差異，調味僅作參考，按照實際需要或個人口味進行調整。</li>



<li>建議放冰箱保存，盡量兩星期內左右吃完。</li>



<li>蒜蓉醬油膏可以適量加入醬油，調整顏色深淺。</li>



<li>市售醬油鹹甜不同，澱粉性質/純度各不同，可以慢慢調整用量嘗試，調出自己喜歡的口味和濃稠度。</li>
