<p class="wp-block-paragraph">在廣東不少人家裏都有醃鹹柑桔，以作<strong>「看門口」，以備不時之需</strong>。加上醃鹹柑桔<strong>成本很低及簡單</strong>，只需把柑桔和大量粗鹽放入玻璃瓶或瓦罐密封醃製半年，即製成鹹柑桔。傳統醃製鹹柑桔，一般需時半年，但普遍認為醃製的時間越長功效越好，所以不乏醃製十年以上的鹹柑桔，更會被為家傳之寶，極為珍貴，更有母親為女兒醃製，備作女兒嫁妝的說法。</p>

<p class="wp-block-paragraph">鹹柑桔是坊間的偏方，主要可以舒緩喉嚨不適，深受大家認識和喜歡。鹹柑桔用了大量鹽醃製，具有消毒殺菌的功效，亦有清熱潤喉、化痰止咳和生津止渴的作用， 特別適合一些久咳失聲、咽喉腫脹、睡眠不足和煙酒過多的人士。小時候試過咳嗽了很久嘗了很多方法，就是無法斷尾，讓家裏的老人家擔憂不已。直到舅母與鄰居討來一些十幾年的鹹柑桔(非常珍貴)，用熱沖開，喝完後就沒有再咳了。</p>

<p class="wp-block-paragraph">這些年，每當久咳及喉嚨痛時就會拿取出一些鹹柑桔沖水喝下，酸、甜、鹹共冶一爐，頓時紓了緩喉嚨的不適，也為口腔帶來了一陣怡人的香氣，我喜歡到不得了！但是近年醃製速度已趕不上消耗的速度，尤其是在新冠疫情的幾年中，種種因素之下中斷了醃製，導致家裏沒有存貨了。所以，今年收到朋友在果園摘的柑桔，百忙之中也要抽出時間醃製，以作不時之需。</p>

<p class="wp-block-paragraph">我喜好用長方型的柑桔，因為容易買到，糖份也較低。四季桔也可以，使用品種就看個人喜好。</p>



<p class="wp-block-paragraph">一般會選擇成熟的柑桔，表皮呈橙黃色，手感硬實。另外，避免用表皮帶⻘的柑桔，未成熟的柑生澀味苦，太成熟而軟爛或出水的柑桔也不宜用來醃製。最好是選用有椗的柑桔，可以避免在醃製過和中發霉，毀了一整瓶心血。提醒一下，新年用作觀賞的盆桔也不適，為了美觀會用較多的農藥。</p>

<p class="wp-block-paragraph">傳統的喝法只需把鹹柑桔切成幾份，稍為壓爛，<mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">用沸騰的開水沖泡即可</mark>。</p>



<p class="wp-block-paragraph"><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-2-color">不一定用來看門口，可以調製日常飲料，很推薦加冰塊的喝法</mark>。把一顆鹹柑桔切開4塊，再加入水和冰塊即可。把柑桔壓爛更出味，把鹹柑桔又冰又冷，激發了柑桔的香氣，冰鹹的觸覺與味覺同時衝擊，是夏天的最佳飲料，降温之餘又補充鹽份。也可以調成其他飲料，如鹹檸蜜、柑桔氣泡水等等，也很受歡迎。</p>

<p class="wp-block-paragraph"><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-1-color">一般而言鹹柑桔至少醃製半年，亦可長達10幾20年，30多年的也有。</mark>是否年份愈大愈好？坊間的確有這樣的說法，是否成立就不去深究，能流傳下來民間偏方必有他的可取之處。</p>



<p class="wp-block-paragraph">值得提醒一下，醃製期間如保存不當，會增加發霉機會。取柑桔的器具如不潔，也會讓一整瓶柑桔壞掉。</p>



<p class="wp-block-paragraph">未吃過20～30年的鹹柑桔，一般10年左右就會吃完，所以有年份的更顯得彌足珍貴。如作為嫁妝，就更有份量有實用性。</p>

<li>選取外貌完整的柑桔，如柑桔有桔椗先剪短桔椗，用清水清洗幾次。</li>



<li>再用鹽浸1～3小時，有助清洗農藥及污垢。</li>



<li>把柑桔表面的水份擦乾，放在陰涼處風乾一晚。</li>



<li>準備有蓋玻璃瓶，必須確保無水無油，並高温消毒過。</li>



<li>先在玻璃瓶的底部鋪上一層粗鹽，再放入一層柑桔，然後填上粗鹽填滿空隙。之後放一層柑桔、一層粗鹽，如此類推。過程中可以搖晃玻璃瓶讓粗鹽填滿空隙。</li>



<li>直至柑桔接近瓶口頂部，再以粗鹽封頂。</li>



<li>再把瓶蓋擰緊，減少瓶內空氣，可以降低發霉機會。</li>



<li>在瓶蓋貼上浸泡日期，記錄醃製和儲存時間。</li>



<li>放在陰涼處7～14日，部份鹽開始化水，如柑桔露出來，可以適量補鹽封頂。</li>



<li>存放在陰涼處醃製半年以上。</li>

<p class="wp-block-paragraph">一般都避免使用一些沒有桔椗的柑桔，因為非常容易變壞。表面看起來，與一般的柑桔無異，可能是金玉其外敗絮其中，往往在醃製過程中就會有顯露出來，一顆壞果足以毀掉一整瓶。</p>



<p class="wp-block-paragraph">因此，我會採用<strong><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-palette-color-2-color">「鹽浴法」</mark></strong>，讓壞果無所遁形，一一挑掉再入玻璃瓶，大大降低整瓶變壞的機會。當然，所有柑桔都可以先採用短期鹽浴法，再入瓶長期醃製，那就萬無一失了。</p>

<li>&nbsp;柑桔須在陰涼位置至少半年或以上，避免陽光直射。</li>



<li>不要加水或糖，一定是補鹽。</li>



<li>非必要也不要打開樽蓋。</li>



<li>可用保鮮紙封瓶口，再蓋上蓋子，可以更密封。</li>



<li>表層的柑桔露出鹽水後容易變壞，可酌量加鹽封頂。或把瓶子倒轉放置一段日子，再放正。</li>



<li>若小部分柑桔出現發霉情況，應盡快挑起發霉部分丟棄。</li>



<li>隨著醃漬時間愈長，柑桔的顏色會愈來愈黑，有說功效更佳。</li>
